    That recipe is for custard style chocolate mousse which is a bit more work but, also a great tasting mousse.
    This recipe however, is all about the ease and quickness of making a mousse.

     

    I hate when food goes bad because it has not been stored correctly. Luckily, I found some Genius Ideas for Food Storage that you might find helpful too!

    This recipe is especially for anyone asking what chocolate is keto friendly.

    Believe me, I feel like I may almost be an expert in finding low carb chocolate as this is something that I have been doing for a long time. However, finding a low carb chocolate may be as simple as well, reading a label.

    Here is how to find out if your chocolate is low in carbs.

    Read the label and check for both carbs and added sugar. The addition of sugar as a sweetener is a sure sign that there are carbs as well. This is why I am using unsweetened cocoa powder in this chocolate mousse recipe.

     

    While making your mousse you may ask yourself why is my chocolate mousse not fluffy.

    Let me first tell you that it may need a bit more time when it comes to whipping up your mousse. Switching to a whisk attachment can help as well.

    Mousse gets fluffy when there is air introduced into it to add the fluff.
    However, once you hit that perfect 'fluff' in your mousse I suggest stop mixing. Over mixing the mousse can make it deflate.

    I mentioned above that using a whisk attachment can help introduce more air into your mousse and thus, make it fluffy. However, you should start this recipe using standard mixer beaters as the cream cheese will need to get broken down.

    Here are some more helpful tips.

    1. This is one of the few recipes that I seem to post that do not necessarily require a granular sugar alternative. Feel free to use a liquid sugar alternative and to also adjust the amount added to your tastes.
    2. Adding a bit of espresso can really make this recipe taste good. Feel free to add a half to a whole teaspoon of espresso if desired.
    3. While this recipe calls for unsweetened cocoa powder feel free to add some sugar free chocolate chips.

     

    How to store mousse.

    I should start by mentioning that this recipe tastes best if served right away. However, if it is stored in an air tight container or with plastic wrap on top, this should keep for a few days. You may need to re-fluff it before serving.

    I mentioned above that using a whisk attachment can help introduce more air into your mousse and thus, make it fluffy. However, you should start this recipe using standard mixer beaters as the cream cheese will need to get broken down.
     

    This recipe can also be made vegan.

    Instead of cream cheese, use a tofu based cream cheese.
    Also, instead of whipping cream, use you can use coconut milk or coconut cream or a mixture of the two.

    What you will need to make easy chocolate keto mousse.

    • Cream Cheese- 4 ounces. That is one half of an 8 ounce brick of cream cheese. Have this softened to room temperature.
    • Heavy Whipping Cream- ½ cup.
    • Unsweetened Cocoa Powder- 2 tablespoons.
    • Sugar Alternative- equivalent to ¼ cup of sugar.
    • Vanilla Extract- 1 teaspoon.
    • Optional- ½ teaspoon of instant espresso.

    • Beat together the cream cheese and heavy whipping cream on low until blended.
    • Add the cocoa powder, sugar alternative, and vanilla extract and mix on low for thirty second. Turn the speed on the mixer up and continue to beat until fluffy. You can add any optional espresso here as well. Tip: switching to a whisk attachment can yield a fluffier mousse.
    • Serve with my Sugar Free Whipped Cream on top if desired.
