I mentioned above that this recipe for keto brownies is made with almond flour. Make sure that you are using a blanched almond flour rather than almond meal for best results and texture.

For best results, mix the batter by hand using a whisk. Also, simply mix until just blended as introducing additional air can alter the fudgy consistency of these brownie's.
Ingredients Needed to Make Keto Fudge Brownies.
- Unsweetened Cocoa Powder- ¾ cup.
- Baking Soda- ½ teaspoon.
- Coconut Oil-⅔ cup melted. Please allow this to cool to room temperature before adding it to the mixing bowl.
- Water- ½ cup boiling.
- Sugar Alternative- 1 cup. Truvia Sweet Complete is recommended for this recipe. If you decide to use another sugar alternative, make sure that it measures 1:1 with sugar and can be baked with.
- Eggs-2. Please have your eggs at room temperature for this recipe.
- Almond Flour 1 ½ cups. Make sure that you are using a blanched almond flour rather than almond meal for best results and texture.
- Vanilla Extract- 1 teaspoon
- Salt- ½ teaspoon.
- Optional- chopped nuts such as walnuts and/or keto and sugar free chocolate chips.
How to make Easy Fudge Keto Low Carb Brownies.
- Preheat your oven to 350 and prep a square baking pan for nonstick. I like using parchment paper that overhangs the sides of the baking pan.
- Melt the coconut oil and allow it to cool.
- In a mixing bowl, use a whisk to mix together the unsweetened cocoa with the baking soda. Then add half of the melted coconut oil along with the boiling water. Carefully mix this until just blended. Then add the remaining oil along with the sugar alternative and eggs, mixing until just blended.
- Next, fold in the almond flour with the vanilla extract and salt. You can also fold in any optional ingredients.
- Transfer to the prepared baking pan and bake for 25-30 minutes or until a toothpick comes out clean. Allow these to cool before cutting and serving.
