Some folks ask what foods are gluten free.
Gluten is a protein that is found in grains such as wheat. It has the important purpose of holding dough and batters together.
Because this recipe is gluten free, we will use ingredients that do not have gluten in them.
The obvious ingredient that we will use is gluten free baking flour. Gluten free baking flour measures 1:1 with regular flour and comes with the binder replacement already in it (please check the label to make sure).
Here is how to make gluten free bake better.
One reason why I am suggesting that you use a gluten free baking flour is because gluten free flour often needs to be measured in a specific way. Gluten free baking flour has been made to measure just like regular flour which makes it even easier for us to bake with. T
Baking with gluten free flour can differ however from regular flour.
Because gluten free flour has no gluten, mixing the batter more than a normal batter is often encouraged.
Also, sometimes baked good that have gluten free flour can benefit from baking beyond the usual 'clean toothpick' stage as well.
Here are some tips for making gluten free brownies.
I just mentioned that using gluten free baking flour makes it easier to bake with. This is because this flour has a binder already in it and it should measure 1:1 with flour (read the label to make sure!).
Here are some more helpful tips for you.
- As with the flour, read the label on the other ingredients that you use. Make sure that those ingredients, such as cocoa and sugar alternative, are also gluten free.
- This recipe calls for slivered or sliced almonds. Feel free to use another nut such as walnuts instead.
- Because we are using both a sugar alternative and a flour alternative in this recipe, you may need to make a few adjustment as these ingredients hold on to moisture differently. Feel free to add additional butter, for example, as needed for moisture.
Using the right kind of cocoa powder is also important in this recipe.
Making sure that it is unsweetened cocoa powder that is also gluten free is essential. Also, the sugar alternative that you choose should be a granular sugar alternative that measures 1:1 with sugar and is also gluten free.

How to make Sugar Free Gluten Free Almond Brownies
- Preheat your oven to 325 and prep a square baking pan for nonstick. I like to use parchment paper that over hangs the pan for easy transferring for cutting up the brownies (as well as easier clean up).
- In a medium bowl, use a fork or a whisk to mix together the gluten free baking flour with the cocoa powder.
- Next, in a mixing bowl, mix together the sugar alternative with the butter. Then mix in the the ingredients from the first bowl until just blended. Mix in the eggs and the vanilla extract. Since there is no gluten in the flour, you do not need to be overly cautious about over-mixing this batter. YAY!
- Lastly, fold in the chocolate chips and the almonds. Allow the batter to sit for five to ten minutes before transferring it to the prepped baking pan and putting it into the oven.
- Bake the brownies for 15 minutes and then place the remaining almonds on top of the brownies. Continue to bake for for an additional 10 to 15 minutes. The toothpick test may give a false positive as there are chocolate chips in this recipe. As a result, you will need to simply use your own judgement to assure that the brownies are done. Allow the brownies to cool before cutting them up and devouring them 🙂 .

I don't need and don't have gluten free flour so I used almond flour. I knew my husband wouldn't like the almonds slivers so I left them out. I thought they had a pretty good flavor and texture for being healthy. We are just getting used to sugar free and it's been quite an adventure. The almond flour made them a little gritty but the flavor was pretty good. Needless to say the grandchildren didn't like them at all. lol More for me! My husband did go back and eat some on his own, without me asking if he wanted any. I was surprised to see the "butter" floating on top and bubbling away when I opened the oven door. It was also fun to watch it all soak back in. 🙂 Thx, I think we are keeping this recipe.
