    Both this recipe and that recipe certainly are all about the pumpkin as well!
     

    Pumpkins are actually pretty healthy to eat. They are virtually fat free and have nearly double the recommended daily allowance of Vitamin A. Pumpkins do have a bit of natural sugar in them. Thus, we will keep the added pumpkin to a per serving low on added sugar in this recipe.

    This recipe is for anyone asking do pumpkin seeds make you happy.

    I can tell you that pumpkin seeds do make me happy.
    This probably has something to do with the childhood memories that I have when it comes to pumpkin carving and seed roasting.

    But, the truth is that pumpkin seeds can make you happy.

    Pumpkin seeds contain that tryptophan which is associated with promoting the production of serotonin in the body.
    As a result, you can feel pretty good after enjoying those seeds. Who knew right?

     

    People always ask me what are pumpkin seeds supposed to taste like.

    To be honest, if you were to simply scoop out the seeds from the pumpkin and then rinse the seeds, you probably would not enjoy the taste of the seeds. This is why we toast the seeds in seasoning.

    For this recipe we will use a mix of sweet and spicy seasonings.

    I suggest using a granular sugar alternative for your sweet seasoning in this recipe. You will also need a neutral oil such as canola oil.

     

    Here are some tips for roasting pumpkin seeds.

    So I just mentioned that we will add flavor to these roasted pumpkin seeds. The sweet seasoning will come from granular sugar alternative .

    Here are some more pumpkin seed roasting tips for you.

    1. It is normal for some of the pulp to stick to the seeds after you have rinsed them off. This is no big deal as the pulp can also be baked and enjoyed.
    2. While this is a sweet and spicy recipe, feel free to adjust your seasonings to make it yours. This can include Italian Seasonings, Everything But The Bagel Seasoning, or Mediterranean Diet Seasoning Blend
    3. Serve these seeds, once cooled of course, with some nuts, dried fruit, or sugar free chocolate chips. Your friends will probably love you for doing so!

    After you scoop the seeds from the pumpkin, rinse them off in a colander, pulling off any pulp that remains on them.
    Then lay the seeds out to dry on a paper towel or clean kitchen towel so that they are not overlapping one another.

    • Granular Sugar Alternative- 1 tablespoon.
    • Allspice- 1 teaspoon.
    • Ground Cinnamon- ยฝ teaspoon.
    • Cumin- ยฝ teaspoon.
    • Chili Powder- ยฝ teaspoon.
    • Canola oil - 1 tablespoon.

    • Clean the pumpkin seeds as described above. Rinse them in a colander and allow them to mostly dry out on a paper towel or clean kitchen towel.
    • Prep a rimmed baking sheet for non-stick. Some folks like to use parchment paper or foil that is lightly sprayed with nonstick. Preheat your oven to 300.
    • In a small bowl, mix together your sugar and seasonings. Make any adjustments as needed for flavorings as desired.
    • Next, in a medium bowl, toss together the pumpkin seeds with the canola oil. Then add the seasonings from the small bowl and continue to toss.
    • Lay the seeds out on the prepared baking sheet and bake until they begin to brown (about 45 minutes). Be sure to stir the seeds as needed during the baking process. Allow the seeds to cool before eating.
