Here is how to make pumpkin puree.
Preheat the oven to 325 and cut a small pumpkin in half (some folks like a sweet or baking pumpkin as they have more meat in them). Remove the stem, seeds, and pulp. Cover both of the halves with foil and bake for an hour or until tender. Then while the pumpkin meat is still warm, scoop it from the pumpkin and puree it until done. You can freeze this away for later use!!

This recipe calls for milk. However, you can easily use a vegan nut milk or a low carb half an half in place of the milk.
Ingredients needed to make a Sugar Free Pumpkin Spice Latte
- Prepared Hot Coffee- can be espresso (which is preferred) or something really strong or you prefer better. ยผ cup hot.
- Pure Pumpkin Puree- 2 tablespoons (or... 1 teaspoon of Sugar Free Pumpkin Flavored Syrup + 1 ยฝ tablespoons of Greek Yogurt)
- Milk- 1 cup, can be whole (best for taste and texture), evaporated, skim, etc. Alternatives include half an half or a nut milk such as Almond Milk.
- Sugar alternative- 1 tablespoon equivalent to sugar.This can be any sugar alternative of your choice such as honey (ยฝ tbsp), Splenda, or even stevia. Read the packaging to make sure that you are using the amount of the alternative that is equivalent in taste to 1 tablespoon of sugar.
- Pumpkin pie spice- ยฝ teaspoon plus additional for topping.
- Pure vanilla extract- ยฝ teaspoon. Pure works best however, you can use your imitation if you do not have the pure stuff.
- Whipped cream- as needed for topping.
How to make Your Own Pumpkin Spice Latte
- Prepare your coffee and place it into a large mug. Set this aside.
- You can make this in a microwave using a microwave-safe bowl or large microwave-safe measuring cup with vented plastic wrap on top.
In your microwave bowl, combine the pumpkin puree, milk, sugar alternative, pumpkin pie spice and vanilla. Microwave until the milk is hot, 1 ยฝ to 2 minutes. Skip the next step (stove top directions) and continue on to the step after it. - Stove top directions. If working on the stove and not the microwave, simply combine your milk, pumpkin, sugar alternative, pumpkin pie spice, and vanilla in a saucepan. Heat on medium, stirring as needed, until it is warm- usually about three minutes.
- Using either methods (microwave or stove top), whisk your warm milk mix vigorously until the mixture appears foamy, about 30 seconds. Caution should be taken as the liquid could be hot.
- Pout the whipped milk mixture over the coffee that was set aside in the first step. Top with whipped cream and additional pumpkin pie spice as desired.
- Optional, if you want an added whipping to your latte mix- carefully pour your mixture into a blender and blend for a minute. It will be hot! You may need to use a pot holder to help you.

- Microwave method- In your microwave bowl or separate microwave safe coffee mug, combine the milk, pumpkin puree, sugar alternative , pumpkin pie spice and vanilla extract. Microwave until the milk is hot, 1 ยฝ to 2 minutes. Skip the next step (stove top directions) and continue on to the step after it.
- Stove top directions. If working on the stove and not the microwave, simply combine your milk, pumpkin, sugar alternative, pumpkin pie spice, and vanilla in a saucepan. Heat on medium, stirring as needed, until it is warm- usually about three minutes.
- Using either methods (microwave or stove top), whisk your warm milk mixture vigorously until the mixture appears foamy, about 30 seconds.
- Pour the warm milk mixture from either method over the coffee in the mug from the first step. Top as desired with whipped topping and additional pumpkin pie spice.

Is there a calorie count on the pumpkin spice latte??

It would depend on the ingredients that you choose to use. For example, if you used Greek Yogurt and a Sugar Free Pumpkin Syrup instead of pumpkin puree and almond milk instead of regular whole milk, this could have relatively few calories per serving.
However, using alternatives may alter the taste which is something to consider. Do you want the full taste with a few more calories or do you want the lower calorie alternative? I could probably enjoy both ๐
