How to make a sugar free, keto, low carb, and gluten free crust.
This is a four ingredient recipe.
- Almond Flour- 1 ½ cups
- Monk Fruit- ¼ cup. You can use the granulated sugar alternative of your choice.
- Ground Cinnamon- ½ teaspoon.
- Butter- ⅓ cup, melted
How to make the sugar free cheesecake crust.
Line a square baking dish with parchment paper and preheat your oven to 350.
Combine all of the ingredients in a mixing bowl and mix until it reaches a 'granular' consistency. Then press the mixture into the prepped baking dish until it turns golden (six to eight minutes). Allow the crust to cool.
Ingredients needed to make Sugar Free Keto Low Carb Pecan Cheesecake Bars

- Cream Cheese- 16 ounces, softened to room temperature.
- Monk Fruit- ¼ cup, granulated. Can use another sugar alternative that measures like monk fruit and that can be baked with.
- Ground Cinnamon- 1 teaspoon.
- Baking powder-½ teaspoon.
- Vanilla Extract- 1 teaspoon.
- Heavy Cream- ¼ cup, at room temperature.
- Eggs- 2, beaten.
- Melted Butter- ¼ cup (for topping).
- Monk Fruit-¼ cup (for topping)
- Heavy cream- ¼ cup (for topping).
- Vanilla Extract-½ teaspoon, (for topping).
- Chopped Pecans- 1 cup, (for topping).
How to make Sugar Free Pecan Cheesecake Bars.
- Prepare the crust as indicated above. Allow the crust to cool while you prepare the inside layer of these bars. You can keep the oven set to 350.
- In a mixing bowl, beat together the cream cheese with the sugar alternative, ground cinnamon, and baking powder until creamy. Then beat in the vanilla extract and heavy cream. Lastly, fold in the eggs
- Transfer the mixture to the cooled crust. To remove any bubbles simply shake the the baking dish from side to side to release the bubbles. Then bake for 20-25 minutes, or until the center of the cheesecake is set. Turn the oven off and leave the cheesecake in the oven, with the door slightly open, to cool.
- To make the topping, over low to medium heat, brown the butter with the monk fruit while stirring continually. Remove the browned mixture from the heat and stir in the heavy cream, vanilla extract, and chopped pecans. Evenly distribute this topping over the cheesecake layer of the bars and refrigerate for at least an hour to set before serving.
