    These cheesecake bars are like a marriage between pecan pie and cheesecake.

    The best part is that there is no added sugar in this tasty dessert recipe!

    You may be wondering what are the benefits of eating pecans.

    Personally, I love the taste of pecans.
    Even better, pecans during that holiday baking season have little competition for me.

    However, there are some benefits associated with eating pecans.
    Like most nuts, pecans are a low carb high fiber source of food.
    Pecans are also a decent source for magnesium, potassium, protein, and monounsaturated fat.

     

    This recipe for sugar free keto cheesecake bars has three layers.

    There is a keto, low carb, and sugar free crust that is the base of the dessert.
    Also, there is a creamy pecan topping that goes on top.

    It is the cheesecake that makes up the center of these bars.

    This sugar free cheesecake recipe is based upon the basic recipe idea for a baked cheesecake.
    Every layer of this cheesecake bar recipe has no added sugar.

    Here are some tips for making sugar free pecan cheesecake bars keto and low in carbs.

    I like to line my baking dish with parchment paper that overhangs the sides of the baking dish. This allows for for easy transferring when I cut the bars.

    Here are some more helpful tips for you.

    1. While this recipe calls for pecans, you could use another nut in addition to or instead of the pecans. Hazelnuts or walnuts are good choices.
    2. The cream cheese used in this recipe should be softened at room temperature. This is done to insure that there are no added lumps to the cheesecake.
    3. The cooling step for these cheesecake bars is a bit different from other recipes. Instead of transferring the cheesecake bars to your countertop to cool, turn the oven off and and prop the oven door slightly open.

     

    How to store sugar free cheesecake bars.

    These cheesecake bars should last about five days stored in an airtight container in the refrigerator. You can also freeze these bars for up to a couple of months.

    How to make a sugar free, keto, low carb, and gluten free crust.

    This is a four ingredient recipe.

    1. Almond Flour- 1 ยฝ cups
    2. Monk Fruit- ยผ cup. You can use the granulated sugar alternative of your choice.
    3. Ground Cinnamon- ยฝ teaspoon.
    4. Butter- โ…“ cup, melted

     

    How to make the sugar free cheesecake crust.
    Line a square baking dish with parchment paper and preheat your oven to 350.
    Combine all of the ingredients in a mixing bowl and mix until it reaches a 'granular' consistency. Then press the mixture into the prepped baking dish until it turns golden (six to eight minutes). Allow the crust to cool.
     

    Ingredients needed to make Sugar Free Keto Low Carb Pecan Cheesecake Bars

    • Crust- see post for details.
    • Cream Cheese- 16 ounces, softened to room temperature.
    • Monk Fruit- ยผ cup, granulated. Can use another sugar alternative that measures like monk fruit and that can be baked with.
    • Ground Cinnamon- 1 teaspoon.
    • Baking powder-ยฝ teaspoon.
    • Vanilla Extract- 1 teaspoon.
    • Heavy Cream- ยผ cup, at room temperature.
    • Eggs- 2, beaten.
    • Melted Butter- ยผ cup (for topping).
    • Monk Fruit-ยผ cup (for topping)
    • Heavy cream- ยผ cup (for topping).
    • Vanilla Extract-ยฝ teaspoon, (for topping).
    • Chopped Pecans- 1 cup, (for topping).

     

    How to make Sugar Free Pecan Cheesecake Bars.

     

    • Prepare the crust as indicated above. Allow the crust to cool while you prepare the inside layer of these bars. You can keep the oven set to 350.
    • In a mixing bowl, beat together the cream cheese with the sugar alternative, ground cinnamon, and baking powder until creamy. Then beat in the vanilla extract and heavy cream. Lastly, fold in the eggs
    • Transfer the mixture to the cooled crust. To remove any bubbles simply shake the the baking dish from side to side to release the bubbles. Then bake for 20-25 minutes, or until the center of the cheesecake is set. Turn the oven off and leave the cheesecake in the oven, with the door slightly open, to cool.
    • To make the topping, over low to medium heat, brown the butter with the monk fruit while stirring continually. Remove the browned mixture from the heat and stir in the heavy cream, vanilla extract, and chopped pecans. Evenly distribute this topping over the cheesecake layer of the bars and refrigerate for at least an hour to set before serving.

    • ยผ cup Monk Fruit
