- These cookies may appear puffy when they come out the oven. This is normal.
- Because of the greenish color of these cookies, it may be hard to determine when these cookies are done baking. However, these cookies should not be overbaked so I suggest that you allow these to bake no longer than 12 minutes and allow them to cool on the baking sheet at room temperature.

These cookies should be stored in an air tight container. If properly stored in a refrigerator, they should keep for four to five days.

The texture that makes the Snickerdoodle different from the other cookies lies in the addition of one ingredient.
That one ingredient which is responsible for the voluminous texture of the Snickerdoodle is cream of tarter. Cream of tarter is a leavening agent that is added to this cookie to work with the other ingredients to cause a reaction which in this case, would be the texture that defines the snickerdoodle cookie.
Ironically, cream of tarter is a byproduct of making wine.
You may be familiar with cream of tarter as it is an essential ingredient in making meringue. The reaction in meringue is a result of the cream of tarter and the egg whites that have been added to the recipe.
Ingredients needed to make this matcha snickerdoodle cookies recipe.
- Flour- 2 cups all purpose flour. Feel free to sub in a gluten free all purpose flour or low carb all purpose flour. Check the packaging for details of use however.
- Cream of Tartar- 2 teaspoons.
- Baking Soda- 1 teaspoon.
- Salt- ½ teaspoon.
- Matcha powder- 2 teaspoons.
- Butter- 1 cup (2 sticks), unsalted butter softened at room temperature.
- Granular Sugar Alternative- 1 ½ cup. Please use a sugar alternative that is granular, measures like sugar, and that can be baked with for best results.
- Eggs- 2.
- Vanilla Extract- 1 teaspoon.
- For the Sugar Free Cinnamon Sugar Mix- 1 cup Granular Sugar Alternative + 2 tablespoons of ground cinnamon.
How to make this recipe for Sugar Free Matcha Snickerdoodle Cookies.
- Preheat your oven to 325 and prep two cookies sheets for nonstick. I use parchment paper.
- In a medium bowl, use a fork or a whisk to combine the flour, cream of tartar, baking soda, salt and Matcha powder. Set this bowl aside.
- Next, in a mixing bowl beat together the butter and sugar alternative until smooth. Then mix in the eggs and vanilla extract. Add the dry ingredients from the first bowl to the mixing bowl and ix until just incorporated.
- In a shallow bowl, use a fork or whisk to blend together the remining sugar alternative and ground cinnamon. Using a small cookie scoop or a tablespoon, scoop up a ball of the cookie dough and then roll it through the cinnamon sugar mix in the shallow bowl. Then place the cookie on to the prepped baking sheet and press it flat. Continue with the remaining cookie batter, leaving room between cookies for spread. Bake the cookies for 10- 12 minutes or until the edges begin to brown. Remove the cookies from the oven, sprinkle additional cinnamon sugar (alternative) on top. Then allow the cookies to cool on the sheet for 10 minutes before transferring them to a rack to finish cooling. *Note: Your cookies may appear puffy when they come out the oven which is normal.
