To make these cookies you will need two round cookie or biscuit cutters.
One cutter will be used to cut out the cookie and the other will be used to cut a hole in the center of top cookies.
This is a simple cookie that is really made in three parts.
The first part is making the cookie dough which will then need to be refrigerated.
Then we will roll out the dough and cut the shapes before baking. Once the cookies have baked, we will assemble them.
Ingredients needed to make sugar free cookies
- Butter- ¼ cup (four tablespoons or half a stick). The butter should be softened to room temperature. If you are using a an unsalted butter, feel free to add a pinch of salt or as needed.
- Sugar Alternative- ½ cup . Please use a granular sugar alternative that measures 1:1 with sugar and that can be baked with.
- Almond Flour-2 cups. Look for a blanched almond flour. Any flour alternative should measure 1:1 with almond flour.
- Eggs-2
- Vanilla Extract- 1 teaspoon
- Sugar Free Jam- ½ cup or as needed.
How to make Keto Sugar Free Jam Filled Cookies
You will need two cookie cutters, one large for the cookie itself and one smaller for the hole on the top cookies. The cookies will bake not assembled and should be baked separated.
- In a mixing bowl, blend together the butter with the sugar alternative until smooth. Then add the almond flour, eggs, and vanilla extract mixing until smoothly blended. Transfer the dough to plastic wrap, wrap it well, and refrigerate for at least an hour.
- When you are ready to make the cookies, divide the dough in half. Line a rimmed cookie sheet with parchment paper. Lay out an additional sheet of parchment paper on your work space to work on. Preheat the oven to 350 f.
- Roll out the first half of the dough to about ⅛" thickness on the parchment paper then use the larger cookie cutter to cut out the cookies and place them on to the baking sheet.
- Next, roll out the remaining cookie dough. Use the larger cookie cutter to cut the cookie and the smaller cutter to cut a hole in the center of the cookie. Transfer the cookies to the cookie sheet for baking. You should have equal amounts of cookies with holes in the center to cookies without holes in the center. Bake the cookies for 10-12 minutes or until they begin to turn golden.
- To assemble the cookie sandwiches. Allow the cookies to fully cool on a rack. Place about a half of a tablespoon (or as needed) of the jam on the cookies without the hole in the center. Dust with sugar free powdered sugar and serve.
