Everyone asks what is a spritz cookie and why are they called spritz cookies.
Spritz cookies are really a lot like other cookies in many ways.
These cookies really rely upon the soft butter which makes them so easy to press into shapes.
On the other hand, spritz cookies are also a lot like sugar cookies.
Technically, the 'spritz' in spritz cookies comes from a German term for 'squirt'. They are called 'spritz' or 'squirt' cookies because they the cookie batter is 'squirted' through a cookie press into those fun shapes.
There is a secret to making spritz cookies.
I should say that like most anything else, the success of this cookie may also have something to do with the beholder biting into the cookies. However, there are tweaks that we can take along the way to make that cookie more appealing.
This is one cookie that really should be made with butter.
That butter should be softened to room temperature. This is because creaming of the butter with the granular sugar alternative is what can make this a successful cookie.
Here are some tips for making spritz cookies.
I just mentioned that the success of this cookie has a lot to do with the softened butter. It is that softened butter and how it is combined with the granular sugar alternative that can really make this cookie look and taste good.
Here are some more helpful tips.
- This is one of the few cookies that I suggest you not pretreat the cookie sheet for. Because this cookie recipe depends so much on the butter in the batter, an ungreased cookie sheet can insure less spread of the cookie while baking.
- Spritz cookies work best when you use cookie dough that is made fresh. While some cookie dough can be made a head of time and kept in the refrigerator, this cookie dough works best when made just before using and while at room temperature.
- There are sugar free ways to decorate these cookies. I have recipes for sugar free icing recipes that could work with these cookies. I am also excited to say that there are now sugar free sprinkles that you can buy online (this is new!).
You may wonder why did my spritz cookies go flat.
There are two reason why this could happen- not following the ingredient instructions and having cookie dough that is too warm. It is essential that you use fresh ingredients in the listed quantities. If your dough still seems to loose, try refrigerating the cookie sheets before you place the cookies on to them.

I mentioned above that spritz cookies are cookies that rely upon the creaming of the butter with the granular sugar alternative. For best results when using a cookie press, use fresh cookie dough that is at room temperature.
Also mentioned was that this cookie works best when baked on an ungreased cookie sheet.
Prepping the cookie sheet before placing the cookies on to them can cause the cookies to spread and become flat. If your cookie dough does seem to be a bit loose when it comes out of the cookie press, try refrigerating the cookie sheet before placing the cookies on to it.
Ingredients needed to make Sugar Free Spritz Cookies
- Butter- 1 cup. This is two sticks. The butter should be softened to room temperature.
- Sugar Alternative- ⅔ cup. Please use a granular sugar alternative that measures 1:1 with sugar and can also be baked with.
- Egg-1.
- Vanilla Extract- 1 teaspoon.
- Almond Extract- ½ teaspoon.
- All Purpose Flour- 2 ¼ cup. Low carb folks can try using a low carb all purpose flour (not a baking mix) that measures 1:1 with flour.
How to make Sugar Free Spritz Cookies.
- Preheat your oven to 350. Do not prep your cookie sheets especially with grease.
- In a mixing bowl, cream together the butter with the sugar alternative. Once this is creamy you can mix in the egg and the extracts. Then stir in the flour.
- Use a cookie press to place the cookies on the cookie sheet about two inches apart. If the cookie dough gets too runny, try refrigerating the cookie sheets and try again.
- Bake for 10-12 minutes or until the edges begin to brown. Remove the cookie sheets from the oven and allow the cookies to set on the cookie sheets before transferring to a rack to finish cooling.
