Shortbread is known as a buttery cookie that has no leavening agents.
The short list of ingredients in good tasting shortbread is usually butter, sugar, and flour.
Technically, there a ratio of ingredient that makes the cookie turn out good.
The ingredients usually are added in some sort of a ratio such as 1 cup of flour to one half cup of butter and one quarter cup of sugar.
For best results in making a good shortbread, use quality and fresh ingredients.
You may be wondering what flour is best for keto cookies.
I have used a variety of low or lower carbohydrate flours over the years.
What I can say is that they all seem to have their best uses.
The good news is that over the past few years there have been a number of new keto friendly flours introduced.
For this recipe, I am using a superfine blanched almond flour.
I like the texture of this flour and how it helps hold on to the butter for moisture in these cookies.
Here are some tips for making a keto shortbread cookie with almond flour.
I mentioned that you should be using a superfine blanched almond flour for this recipe. However, please do not use almond meal as it will ruin the texture of these cookies.
Here are some more tips for you.
- This cookie can be made immediately or refrigerated as a roll for 30 minutes for slicing. Roll the dough out into a tight log, wrap it in plastic wrap, refrigerate, and then slice dough into ¼ inch thick slices for baking.
- This cookie dough may seem to be a bit more coarse to work with or even more crumbly than a regular cookie dough. If you are having trouble working with the dough feel free to add a teaspoon or two of unsweetened almond milk.
- I am using vanilla extract for these cookies. Feel free to use another extract to make your cookies more flavorful.

These shortbread cookies are great as they are however, sometimes you also may want something even better. Especially when you are sharing your home baked cookies.
Top your keto shortbread cookies is a great way to make them even better.
Drizzling sugar free melted chocolate chips on top is one way to make these cookies better.
Or you can top your cookies with a bit of granulated sugar alternative or sugar free sprinkles.
Ingredients needed to make recipe for keto shortbread cookies.
- Almond Flour- 2 ½ cups, (blanched almond flour that is also superfine). Feel free to use a keto all purpose flour that measures 1:1 with regular AP flour instead.
- Butter- 1 cup, unsalted. The butter should be at room temperature.
- Sugar Free keto confectioners sugar - ¾ cup. please use a sugar alternative that can be baked with.
- Vanilla Extract- 1 teaspoon.
- Salt- 1 teaspoon.
- Optional- Granular sugar alternative or sugar free sprinkles for topping. Also, 1-2 teaspoons of almond milk as needed for texture.
How to make Sugar Free Low Carb Shortbread
- Preheat your oven to 325 and prep your cookie sheets with parchment paper. Measure out the almond flour into a medium bowl and use a fork or whisk to give it a quick mix to fluff it up.
- In a mixing bowl, beat together the sugar alternative and butter on low until creamy. Then stir in the vanilla extract and salt.
- For the next step, we will add the almond flour. I suggest that you add half of the almond flour at a time, mixing and scraping down the edges of the bowl as needed between the addition. The dough may seem crumbly. If it is too crumbly to roll into a ball, add a teaspoon or two of unsweetened almond milk.
- Use a cookie scoop to scoop out each cookie, roll the cookie to form a ball, and then flatten it on to the baking sheet (leaving room for spread). I gave instructions above on making these cookies using the refrigerated roll method instead. Top with optional toppings as desired.
- Bake the cookies for 12-14 minutes or until the edges begin to turn golden brown. Allow the cookies to cool on a rack before serving.
