    This is a simple recipe that makes a great tasting cookie as is.
    However, you could take these cookies up a notch too!

    You can try adding one of these ingredients or ideas for your cookies.

    • Sprinkle a bit of Kosher salt on top of these just before placing them into the oven.
    • Make these a vegan cookie by swapping in a tablespoon of chia soaked for 15 minutes in 3 tablespoons of water.
    • Stir in some sugar free chocolate chips.
    • Add a half cup of oatmeal (is not keto) along with an extra egg to make these chewy cookies.
    • Sprinkle some sugar free sprinkles on top.
    • Stir in some chopped nuts to add some crunch.

    • Almond Butter- 1 cup, no added sugar.
    • Sugar Alternative- ¾ cup. Use a granular sugar alternative that measures 1:1 with sugar. Surkin Gold is a good brown sugar alternative that could work. Your alternative can be white or brown or a combination but, should be a sugar alternative that can be baked with too!
    • Egg- 1.

     

    How to make Sugar Free Keto Almond Butter Cookies.

     

    • Preheat your oven to 325 and prep your cookie sheets for nonstick (I use parchment paper).
    • Use a fork to stir the almond butter in its container if it appears to be separated. Add a cup of almond butter to a mixing bowl and stir is with a fork to get the almond butter creamy.
    • Add the remaining ingredients and mix until combined.
    • Using a cookie scoop or tablespoon, scoop out your cookies, roll the dough into one-inch balls and place them onto the prepped baking sheets leaving space between the cookies for spread.
      Flatten cookies with a fork in a crisscross pattern. Then bake for 8-10 minutes or until they appear to be set. Do not over-bake.
