This holiday inspired bark is really about the chocolate and the peppermint flavor.
To make this recipe you will need sugar free peppermint candy such as candy canes. You can find a selection of sugar free peppermint candy to use in this recipe here.
You may be wondering, are peppermints keto.
Like with anything else, anything is keto or low carbohydrate diet friendly as long as the ingredients added to it are. This goes with the peppermint candy or candy canes.
The good news is that there is a good variety of sugar free or keto options available.
A few years ago, you would have had to search for sugar free candy canes or 'starlight' style candies.
Now you have your choice of which to use in this recipe.
Why do they call it peppermint bark if this recipe is mostly chocolate?
Obviously, I did not come up with the idea of peppermint or any kind of bark.
But, what I can tell you is that this bark if flavored and topped with peppermint ingredients which is why I am calling it 'peppermint bark'.
This is really a three layer recipe.
The bottom layer is the chocolate layer (dark or milk chocolate).
On top of that chocolate layer we will use white chocolate and then top that with the crushed peppermint candy.

Yes, this recipe is for one chocolate layer, one white chocolate layer, and one candy layer.
However, you are welcome to alternate the chocolate layers differently (white on bottom perhaps) or use additional layers to make this a four layered candy treat. YUM!

- So I am topping this with the standard red and white peppermint candy since this is a 'holiday season' recipe. However, you could use other colored candies (sugar free hard candy) or even add sugar free sprinkles.
- The easiest way to make this candy is to make it as a bark in a baking sheet. However, if you are extra-motived, you could make this candy in candy molds.
- There are two chocolate layers in this recipe. The directions call for refrigerating the bark before adding the second chocolate layer to attempt to keep the layers separated. However, there can still be a bit of blending of the layers which nobody will probably notice anyway. For best results on this not happening, be sure to cool that bottom layer before adding the next chocolate layer.
How to store chocolate holiday bark.
This bark should be stored in an airtight container or zip top bag.
Store this in a cool place such as a pantry (two weeks or so), refrigerator (four weeks or so), or even freezer (two months or so).

How to crush candy for this recipe.
This is about crushing hard candy for a bark candy recipe and not a for a game (had to mention this).
Really, the crushed candy on top of this bark is what really makes this candy do interesting which is why I like different sized chunks.
Place the candy canes or 'starlight' candies into a zip top bag.
Seal the bag after getting the air out of it and then use a rolling pin to crush the candy by rolling the pin back and forth over the bag.
To get different sized chunks roll the full length of the bag once, then ⅔rds, then ⅓rds to get three different sized candy chunks for your bark.
Ingredients needed to make this keto peppermint bark dessert.
- Sugar Free Chocolate Chips- 1 cup (can use dark, semisweet or milk chocolate or a combination).
- Sugar Free White Chocolate Chips (baking)- 1 cup.
- Peppermint Extract- 2-4 drops.
- Crushed Sugar Free Candy Canes or similar candy- ¼- ⅓ cup.
How to make Sugar Free Peppermint Chocolate Bark.
- Start by lining a rimmed baking pan or sheet with foil, wax paper, or parchment paper that overhangs the sides of the pan. I like to give mine a quick spray with nonstick. This recipe as is should fit into a square baking pan (8X8" for example) or small baking sheet (like 9X7").
- Melt the chocolate either in a microwave using a microwave-safe bowl or on the stove using the double boiler method. If you are using a microwave, I like to stop the microwave every 30 seconds to stir. If you are having trouble getting a smooth consistency, stir in a teaspoon of coconut oil. Once melted you can carefully transfer the melted chocolate to the prepped pan/sheet. Spread the chocolate out evenly and then place the chocolate into the refrigerator for 30 minutes (cheat: freeze for 15) or until set.
- Repeat this with the white chocolate chips however, before pouring the melted white chocolate over the other chocolate, stir in the extract. Then evenly spread the crushed candy on top of the white chocolate layer. Again, refrigerate (or freeze) until set.
- Lastly, break the hardened candy into pieces and enjoy!
