Sugar Free Cheesecake Bars

Ingredients

Crust

Optional topping 1 ½ cup fresh or frozen mixed berries+ 1 tablespoon of sugar alternative (such as monk fruit). Crust- recipe in post

Instructions

  • For the crust, prep a square baking pan for nonstick (I use parchment paper). In a medium bowl, mix the ingredients until just combined and then transfer the mixture to the prepped pan, pressing it in as needed. Refrigerate the crust to allow it to harden.
  • In a mixing bowl, beat together the cream cheese, sweetener, and sour cream until smooth. Then stir in the lime juice.
  • Transfer the blended ingredients to the prepared crust, evenly spreading the mixture over the crust. Refrigerate the cheesecake until firm, about four hours.
  • To make the topping, combine the berries and sugar alternative in a saucepan over medium heat and stir until thickened.
