This recipe is especially for anyone asking do cheesecakes have to be baked.
Cheesecakes are cakes that have cheese, usually cream cheese, added to them.
Cream cheese gives the cheesecake a thick texture that also adds structure to the dessert, whether baked or not baked.
Here is when you would have to bake this cheesecake.
When raw eggs are added to a cheesecake, such as in this recipe, the cheesecake should be baked.
The eggs add another element to the structure to the cheesecake as well (think New York Cheesecakes).
This is also a sugar free gluten free cheesecake recipe.
The cheesecake crust that is presented in this recipe has no added sugar in it.
Also, the crust is gluten free diet friendly as there is no gluten added to it.
You will need to pre-bake the crust for this recipe before adding the other ingredients.
When you pre-bake the crust, do so on the most center spot in your oven as possible to ensure that you get an evenly baked crust. Also, grease the pan well before adding the ingredients to the pan.

- This cheesecake is good but, you may still have leftovers. Simply store the cheesecake in an air-tight container in your refrigerator for up to five days.

How to make a sugar free, gluten free, and low carbohydrate cheesecake crust.
If you have your own favorite recipe for a baked cheesecake crust, feel free to use that one.
Otherwise, you will need these ingredients.
- Almond Flour- 1 ½ cups
- Butter- ½ cup. The butter should be melted.
- Sugar alternative that measures 1:1 with sugar. This includes granulated monk fruit- 3 tablespoons.
How to make the crust for this cheesecake.
- Preheat your oven to 325. Heavily grease a springform pan.
- In a mixing bowl, blend the ingredients together until you get a course textured mixture. Then transfer the mixture to the prepped springform pan and press it evenly in the pan.
- Bake the crust for 12 to 15 minutes or until begins to turn golden around the edges. Remove the crust from the oven and allow it to completely cool.
- Cream Cheese- 24 ounces (three eight ounce bars). The cream cheese should be softened to room temperature.
- Granulated Monk Fruit- 1 cup. Feel free to use another sugar alternative as long as it measures 1:1 with sugar and can be baked with.
- Eggs- 4 at room temperature.
- Sour Cream- 1 cup also at room temperature.
- Lemon Juice- 1 tablespoon, no added sugar.
- Vanilla Extract- 1 teaspoon
- For the optional topping, Passion Fruit Pulp (1 cup), Gelatin Powder (1 teaspoon), and Granulated Monk Fruit (2 tablespoons or as desired).
- Bake the crust as indicated above. Allow the crust to cool on a rack.
- In a mixing bowl, beat together the cream cheese and monk fruit until creamy. Then add one egg at a time, gently mixing between additions. Once you have added all of the eggs you can fold in the sour cream, lemon juice, and vanilla extract.
- Transfer the mixture the cooled crust, distributing it evenly.
- Bake the cheesecake for 50-55 minutes or until it is almost set (it will still wobble slightly in the center). The edges will appear to be slightly puffed. Note: Do not open the oven door during the baking time, as opening the door can cause your cheesecake to crack.
- Turn the oven off and leave the cheesecake in the oven until cool (about an hour). Then cover the cheesecake loosely and transfer it to the refrigerator until set (four to six hours).
- To make the passion fruit topping, simply place passion fruit pulp, gelatin, powder, and monk fruit sweetener in a saucepan over medium heat. Stir until monk fruit is dissolved. Then allow it it cool before pouring the mixture over the cheesecake. Refrigerate for 30 minutes or until hardened.
- Tip: When you turn the oven off, take a butter knife and run it around the edges of the cheesecake to loosen it from the pan. This will make it easier for you to remove the cake from the pan successfully when you serve it.
- 24 oz Cream Cheese -softened to room temperature

- 1 tbsp Lemon Juice
- 1 tsp Vanilla Extract
