    Think of this recipe as tasty ice cream sandwiched between two yummy chocolate chaffles.
    You can make this tasty treat as a dessert, snack, or even as a keto cake (I have done this..) for a birthday.

    Also, that sugar free ice cream can easily be used in this recipe as well.
     

    You may be wondering what is a chaffle made of.

    The taste of a chaffle has to do with the ingredients that go into it.
    I say this because there is more than one way to make a chaffle.

    This chaffle recipe is based upon a basic low carbohydrate waffle.

    Some chaffles will be made with a fathead based dough- which means there is cheese added to it.
    However, since the chaffles used in this recipe are chocolate, cheese may not be the best way to go.

     

    Because chaffles are so much like waffles, you may be asking is a chaffle maker the same as a waffle maker.

    Technically, there really is no such thing as a dedicated 'chaffle' maker.
    To make a chaffle, you can simply use a basic waffle maker.

    However, certain waffle makers are more commonly used to make chaffles.

    Belgium waffle makers are commonly used to make chaffles.
    Really, as long as the chaffles get cooked, who cares what shape it is in right?
    But, I would recommend that if you do not have a waffle/chaffle maker, you purchase a waffle maker with removable plates for easy clean up.

     

    Keto Chaffle Ice Cream Sandwich

    Here are some tips for making chocolate waffle sandwiches.

    While I am using ice cream to fill my sandwiches, you can use something else.
    Whipped cream, frosting, or a filling recipe that I share below could work great for you.

    Here are some more helpful tips.

    1. If you have ever made ice cream sandwiches then you know that soft ice cream, not melted yet not hard, works best. Simply allow the ice cream to sit for 10-20 minutes at room temperature until it gets to the perfect texture for spreading between two chaffles.
    2. There are so many ways to make these sandwiches even prettier. Roll the chaffle sandwiches in sugar free sprinkles, chopped nuts, or even keto chocolate chips.
    3. It is important that you allow the chaffles to cool before adding the ice cream to prevent the ice cream from melting into a soggy mess. Feel free to freeze or refrigerate the chaffles first.
    4. Lastly, this recipe is for two mini sized waffle maker chaffles. If you choose to use a regular sized waffle maker you can either double the ingredients or make one chaffle and cut in half to make your sandwich.

     

    How to store chaffle ice cream sandwiches.

    It is best to wrap the completed chaffles in plastic wrap to keep them intact.
    They should keep if wrapped and frozen for a few months.

    About this recipe for sugar free low carb ice cream sandwich.

    This is a keto low carbohydrate sugar free recipe for a chocolate chaffle ice cream sandwich.
    To make this recipe you will first need to make the chocolate chaffles and then use those chaffles to make the sandwich.

    For the sandwich filling you can use a keto ice cream or the cream cheese filling below.

    To make the cream cheese filling option simply blend together the following ingredients:

    • Cream Cheese- Four ounces softened to room temperature (a small block or half of a standard block).
    • Butter- two tablespoons also softened to room temperature.
    • Sugar Free Powdered Sugar- ½ cup.
    • Vanilla Extract- 1 tablespoon.
    • Heavy Whipping Cream- 1 tablespoon or as needed (feel free to use alternative such as whipped topping or half and half).

    Ingredients needed to make Keto Chaffle Ice Cream Sandwich

     

    • Almond Flour- 2 tablespoons.
    • Unsweetened Cocoa Powder- 1 ½ tablespoons.
    • Baking Powder- ¼ teaspoon (basically a pinch).
    • Sugar Alternative- Up to 1 tablespoon (equivalence to sugar).
    • Egg- 1.
    • Whipping Cream- 1 tablespoon, or as needed for consistency.
    • Keto Sugar Free Ice Cream or filling.
    • Optional items as desired such as sprinkles.

    How to make Keto Chaffle Ice Cream Sandwich

     

    • Start by making the chaffles. Prep and preheat your waffle maker as indicated by the manufacturer.
    • In a small bowl, use a fork or whisk to combine the almond flour, cocoa, baking powder and the sugar alternative.
    • In another bowl, whip the egg along with the whipping cream. Then add this to the dry ingredients in the other bowl and mix until just combined.
    • Use a scoop to scoop the batter into the warmed waffle maker (a mini sized waffle maker should use half of the batter per chaffle ). Cook until done (about one and a half minutes per side or three minutes total for mini sized chaffles). Allow the chaffles to fully cool before making the sandwich.
    • Use softened ice cream to spread between the chaffles. Depending on the ingredients used to make the ice cream, this can take between ten and 20 minutes when the ice cream is allowed to sit at room temperature. Then simply spread the ice cream on one chaffle to about ¼" of the edges. Carefully place the other chaffle on top and wrap with plastic wrap before placing it into the freezer to set.
