How to make a sugar free pie crust.
You will need:
- Almond Flour- 2 cups.
- Pecans- ½ cup. The pecans should be chopped fine.
- Sugar Free powdered Sugar- â…“ cup.
- Butter- ½ cup (1 stick) melted.
How to make the crust.
Place chopped pecans and almond flour in a skillet on medium heat stirring frequently until golden brown (about 10 minutes). Then combine the toasted ingredients with the remaining ingredients in a mixing bowl. When you are able to press this ingredients together, press it into a prepared pie pan and then refrigerate until set.
What you will need to make sugar free ganache.
- Heavy or Heavy Whipping Cream- ½ cup. Use less for a thicker ganache result and use more for cream to make a thinner ganache result.
- Sugar Free Semi Sweet Chocolate Chips- 1 eight ounce bag.
- Start by placing the chocolate chips into a bowl.
- Then place the heavy cream in the microwave, using a microwave safe bowl.
- Heat the cream until it begins to bubble or steam, stopping to stir every 15-20 seconds.
- Carefully pour the heated heavy cream over the chocolate chips and allow the cream to melt the chips (3-5 minutes).
- Blend or whisk the ganache, adding any additional flavoring (such as a half teaspoon of vanilla extract if desired), until the ingredients are well blended.
- Pie Crust- 1, see above for recipe.
- Sugar Free Peanut Butter- 1 cup (creamy works best).
- Cream Cheese- 1 eight ounce package softened to room temperature.
- Sugar Free Powdered Sugar- ¾ cup.
- Whipped Topping- 1 eight ounce tub, sugar free preferred. Allow this to thaw a bit.
- Chocolate Ganache- for topping. See above for recipe.
- Make the pie crust as indicated or use a crust of your own. Allow the pie crust to fully cool.
- In a large mixing bowl, combine together the peanut butter, cream cheese, and sugar free powdered sugar. I use a paddle attachment and beat this until I get a smooth consistency.
- Use a rubber spatula to fold in the whipped topping, scraping the sides of the bowl as needed.
- Transfer the contents from the bowl to the pie crust and evenly distribute the ingredients in the crust.
- Refrigerate the pie until the ingredients are set, about 30 minutes.
- Meanwhile, you can make the ganache and allow it to cool to room temperature before topping the peanut butter layer with it.
- Chill this pie before serving. It should take a couple of hours to fully set with the ganache topping. I will usually make more than one pie and then freeze them away. These pies last awhile in the freezer and make for great desserts later on as well.
