Ingredients needed to make this sugar free key lime pie.
- Pie Crust- already made and cooled. Using a premade pie crust is an option. I also provided a recipe for one above that can be made keto, low carb, sugar free, and/or vegan.
- Egg Yolks- 3. Vegan folks can use an egg yolk alternative (read packaging or make adjustments as needed for baking etc).
- Lime Zest- 2 teaspoons. You can adjust this to your tastes.
- Vanilla Extract- 1 teaspoon.
- Sugar Free Condensed Milk- 14 ounces (just under two cups). Here is a recipe for how to make your own sugar free condensed milk.
- Lime Juice- ⅔ cup. That is about five to six average sized limes juiced. There is key lime juice for sale (check for added sugar please).
- Whipped topping as desired. You can make your own sugar free whipped topping using this recipe.
How to make sugar free keto low carb key lime pie.
- Prepare your pie crust as directed and allow it to cool.
- Preheat your oven to 350.
- In a mixing bowl of a stand mixer fitted with the whisk attachment, beat together the egg yolks with the lime zest until the color becomes light and the texture is fluffy (about five minutes on a low to medium speed). Turn the speed to low and slowly add the sugar free condensed milk and vanilla extract. Continue to beat until the mixture has thickened (four to five minutes).
- Stir in the lime juice by hand until just combined.
- Transfer the mixture into the prepared and cooled crust. Then bake for 10-12 minutes or until the filling has set. Bake for 10-12 minutes, until the filling has set.
- Allow the pie to cool on a wire rack. Then transfer it to the refrigerator. It is recommended that you freeze the pie for 15 to 20 minutes before serving.
- Serve with whipped topping or the topping of your choice.
