Sugar Free Homemade Zucchini Bread
This is really the perfect way to make use of zucchini.
I am talking about the zucchini that that is growing in your garden or is in season at your local grocery store.
To be honest, if anything, this is a good way to also get some vegetables into a meal.
While this is technically a bread, we can still sneak in some veggies. However, we do not have to let everyone know that their yummy bread has veggies in it, if you know what I mean (wink wink).
I love growing zucchini in my garden in the summer.
That is, even though zucchini gets to be pretty cheap and in large quantities at my local grocery stores and farmers markets. The point is, being able to tell people that I "grew it myself" is quite satisfying.
I actually use the zucchini too, besides bragging about growing it myself.
When your garden or grocery store gives you a lot of great zucchini, it is time to make use of it.
Making a zucchini bread is one such way to make use of this abundance.
In case you were wondering, some folks do refer to Zucchini as "Summer Squash" or "Marrow".
What it is called really seems to depend on where you are located more than anything.
But, what you should know is that this is a pretty healthy vegetable to have around.
The average zucchini has about thirty calories in it.
Zucchini is relatively low in carbs as well. However, zucchini is a great source for Vitamin C.
I am referring to this recipe as sugar free even though there is a small amount of sugar in the zucchini itself.
This sugar from the zucchini is natural sugar. We will not add any other kind of sugar in this recipe.
Since this is a sugar free recipe, I am posting all purpose flour to be used.
However, gluten free diet people are encouraged to use a gluten free all purpose flour such as one of these. Also, low carb diet people can use a low carb flour to keep the carbs down in their bread.
This bread really is the perfect bread to make.
Besides smelling and looking so incredible while it is baking that is. This bread is perfect for breakfast, snacking, or even giving away to someone else (think picnics and barbecues!).

The recipe for Sugar Free Homemade Zucchini Bread
As mentioned, since this is a sugar free recipe, I am posting all purpose flour to be used.
However, gluten free diet people are encouraged to use a gluten free all purpose flour such as one of these. Also, low carb diet people can use a low carb flour to keep the carbs down in their bread.
To grate your zucchini, do not peel it first.
Zucchini is meant to add to the taste and texture of bread by 'melting' inside of the bread while it bakes.
However, it will be easier to grate the zucchini if it is refrigerated a few days ahead of time and grated just out of the refrigerator.
What you will need to make this Sugar Free Homemade Zucchini Bread.
- All Purpose Flour- 3 cups. Substitutes for all purpose flour: gluten free all purpose flour such as one of these. Also, low carb diet people can use a low carb flour to keep the carbs down in their bread.
- Baking Soda- 2 teaspoons.
- Nutmeg- 1 teaspoon.
- Ground Cinnamon-1 teaspoon.
- Sugar Alternative- Equivalent to 2 cups of sugar. Recommended, 2 cups of granular sugar alternative that also measures 1:1 with sugar in a recipe, for best results.
- Vegetable Oil- 1 cup.
- Eggs- 3 beaten.
- Vanilla Extract- 2 teaspoons.
- Zucchini- 2 cups grated.
- Optional- 1 cup of chopped nuts or raisins or a combination of the two.
How to make Sugar Free Homemade Zucchini Bread
- Preheat your oven to 325 and prep a loaf pan(s) for nonstick. I am a fan of parchment paper(think easy lift out).
- In a medium sized bowl, whisk together your flour, baking soda, nutmeg, and cinnamon. Set this bowl aside.
- Now in a mixing bowl blend together your sugar alternative and oil. The add the beaten eggs and vanilla extract.
- For the next step, we will add the flour mixture to the mixing bowl with the other ingredients. Do so by adding half of the flour mixture at a time, gently mixing between additions. Do not over-mix.Then you can fold in the grated zucchini and optional chopped nuts/raisins.
- Bake your bread in the center of your oven for 45-50 minutes or until a toothpick comes out clean. Allow it to cool for a few minutes before removing from the pan. Baking time can vary depending on how many loaf pans you are using and how thick your bread is.
