- Flour. All purpose flour. I have no tried using a flour alternative in this bread recipe.
- Baking Powder. You can omit this if you are using self-rising flour.
- Sugar Alternative. Select a granular sugar alternative that measures like regular sugar and that can be baked with, for best results.
- Bananas. Your bananas should be mashed for this recipe (which is why the bananas should be really ripe).
- Milk. A full fat milk will help to make this bread more moist.
- Oil. Use a neutral oil like vegetable oil.
- Eggs. Your eggs should be at room temperature for this recipe.
- Vanilla Extract.
- Berries. My bread was made using fresh blackberries. Frozen berries can be used without first thawing them.
Expert Tip 👉 You can use a self rising flour to make this recipe. Simply omit the baking powder and use the same amount of self rising flour (two cups).
How to make Sugar Free Banana Berry Bread
Yield - Serves 10
Prep time: 15 minutes
Cook time: 65 minutes
Cooling time: 30 minutes
- Preheat your oven to 325 and prep a loaf or bread pan for nonstick. Parchment paper or greasing should work for this recipe.
- In a medium bowl, use a whisk to combine together the flour with the sugar alternative.
- Next, in a mixing bowl, beat together the mashed bananas, milk, and oil until combined. Then mix in the eggs and vanilla extract .
- Add the dry ingredients from the first bowl to the mixing bowl and mix until just combined.
- Gently fold in one cup of the berries before transferring the batter to your prepared pan.
- You can gently scatter the remaining berries over the bread before placing the bread pan into your oven to bake.
- Bake your bread for 65-70 minutes or until baked through and the bread turns golden. Allow the bread to cool for about ten minutes in the pan before transferring to a wire cooling rack and allowing to cool completely.
