    That chocolate muffin recipe is made with white chocolate chips. While both sugar free chocolate muffin recipes are tasty, this one has the added cherries for added flavor.

    To make this recipe you will need self rising flour. You can find a selection of self rising flour here.

    Ingredients needed to make Chocolate Cherry Muffins

    • Self rising flour. While I have not tried this, you could try using a low carbohydrate flour that has been whisked together with 1 ยพ teaspoons baking powder.
    • Unsweetened Cocoa Powder.Dutch process could be used for a milder flavor. However, I suggest using basic unsweetened cocoa powder.
    • Sugar Free Alternative. Use a granular sugar alternative that measures like sugar and that can also be baked with as well.
    • Oil. For a better blend of flavors, use a neutral oil such as vegetable oil.
    • Milk. A nut milk can be used alternatively with adjustments for texture if needed however.
    • Egg. Your egg should be at room temperature for best results.
    • Vanilla Extract. Added to help balance out the flavors.
    • Sugar Free Chocolate Chips. Semi sweet works well in this recipe, however, you can use any sugar free chocolate chip of your choice..
    • Cherries. The cherries should be pitted and sliced in half. However, allowing the cherries to sit on a clean paper towel while you work can help drain any remaining liquid.

    How to make Sugar Free Double Chocolate Cherry Muffins

    Yield: 12 muffins
    Prep time: 15 minutes
    Cook time: 25 minutes

    1. Preheat your oven to 325 and prepare you muffin pan for nonstick (liners work well).
    2. In a medium bowl, whisk together the self rising flour with the unsweetened cocoa powder.
    3. Next, in a mixing bowl, beat together the sugar alternative and the oil until combined. Then add the oil, egg, and vanilla and mix until combined.
    4. Add the dry ingredients from the first bowl to the mixing bowl and mix until just combined. Then lastly, carefully fold in the chocolate chips and cherries using a rubber spatula.
    5. Bake the muffins for 20-25 minutes or until the muffins spring back when lightly touched. However, you can try using the toothpick test, testing in more than one spot.
    6. Lastly, allow the muffins to sit in the pan for ten minutes before transferring to a cooling rack to finish cooling.

    Tips for making the best chocolate muffins.

    This recipe is made using self rising flour. While the actual self rising flour is preferred, you can substitute in 1 ยพ cups all purpose flour and 1 ยพ teaspoons baking powder that have been whisked together.

    More helpful tips for you.

    1. When selecting a sugar alternative to use in this recipe, it is a good idea to use one that is granular and that measures like regular sugar. Also, use a sugar alternative that is able to be baked with.
    2. Fill the muffins cups three fourths full as they will expand while baking. Also, you can top each muffin with additional chocolate chips and cherries if desired.
    3. Because these muffins are darker in color and are made with chocolate chips (which can give a false negative), it may be a challenge to determine when they are done baking. However, the muffins should be done baking when they can spring back when gently touched.
    4. My muffins were made with fresh cherries that have been halved and with the pits removed. Certainly, frozen cherries could also work in this recipe as long as they too have had their pits removed and are halved.

    How to store chocolate chip muffins with cherries.

    Leftover muffins should be stored in an airtight container. If properly stored, they should keep for up to a few days at room temperature or frozen for a few months.
