- Self rising flour. While I have not tried this, you could try using a low carbohydrate flour that has been whisked together with 1 ¾ teaspoons baking powder.
- Unsweetened Cocoa Powder.Dutch process could be used for a milder flavor. However, I suggest using basic unsweetened cocoa powder.
- Sugar Free Alternative. Use a granular sugar alternative that measures like sugar and that can also be baked with as well.
- Oil. For a better blend of flavors, use a neutral oil such as vegetable oil.
- Milk. A nut milk can be used alternatively with adjustments for texture if needed however.
- Egg. Your egg should be at room temperature for best results.
- Vanilla Extract. Added to help balance out the flavors.
- Sugar Free Chocolate Chips. Semi sweet works well in this recipe, however, you can use any sugar free chocolate chip of your choice..
- Cherries. The cherries should be pitted and sliced in half. However, allowing the cherries to sit on a clean paper towel while you work can help drain any remaining liquid.
How to make Sugar Free Double Chocolate Cherry Muffins
Yield: 12 muffins
Prep time: 15 minutes
Cook time: 25 minutes
- Preheat your oven to 325 and prepare you muffin pan for nonstick (liners work well).
- In a medium bowl, whisk together the self rising flour with the unsweetened cocoa powder.
- Next, in a mixing bowl, beat together the sugar alternative and the oil until combined. Then add the oil, egg, and vanilla and mix until combined.
- Add the dry ingredients from the first bowl to the mixing bowl and mix until just combined. Then lastly, carefully fold in the chocolate chips and cherries using a rubber spatula.
- Bake the muffins for 20-25 minutes or until the muffins spring back when lightly touched. However, you can try using the toothpick test, testing in more than one spot.
- Lastly, allow the muffins to sit in the pan for ten minutes before transferring to a cooling rack to finish cooling.
Expert Tip👉 Fill the muffins three fourths full as they will expand while baking. Also, you can top each muffin with additional chocolate chips and cherries if desired.
