That cinnamon coffee cake is a basic coffee cake that is quick and easy to make. This coffee cake takes the basic coffee cake up a notch or two with flavor and texture.
This cake is made in a square baking pan. You can find a selection of square baking pans here.
What you need to make a copycat Starbucks Coffee Cake.
Streusel
- Flour - regular all purpose flour.
- Brown Sugar Alternative- Select an alternative that measures like brown sugar for best results.
- Ground Cinnamon- Adds a nice touch of flavor.
- Butter- Your butter should be cold and cut up into chunks.
Cake.
- Cake Flour- Don't have cake flour or using an alternative? You can try using your regular flour but, removing 4 ยฝ tablespoons and whisking in 4 ยฝ tablespoons of cornstarch. Using regular flour alone will result in a more dense cake that will taste okay.
- Baking Powder and Baking Soda- Added for leavening.
- Salt- You can omit this if your butter has salt in it.
- Vanilla Extract- Adds a nice flavor balance.
- Greek Yogurt- Buttermilk can alternatively be used however, to keep this more authentic, use the Greek Yogurt (plain)
- Butter- Softened to room temperature.
- Sugar Alternative- The sugar alternative should be granular, measure 1:1 with sugar, and be able to be baked with.
- Eggs- Room temperature.
How to make Copycat Starbucks Coffee Cake.
- Preheat your oven to 300 and prep a square baking pan or a loaf pan for nonstick.
- Make the streusel as indicated above.
- In a medium bowl, use a whisk or a fork to mix together your flour, baking powder, baking soda, and salt. Set this bowl aside.
- Next, in another bowl use a fork to mix together the Greek yogurt and the vanilla extract
- In a large mixing bowl, mix together the butter and sugar alternative until fluffy without over-mixing it. Then scrape down the bowl and stir in one egg. Lastly, repeat this two more times until all three eggs have been added.
- For the next step we will add the ingredients from the bowl with dry ingredients and and the bowl with the yogurt to the mixing bowl with the eggs. This is done three times which means you will need to add โ of each of the bowls to the bowl with the eggs, gently stirring between additions. (Start by adding โ of the flour mixture and โ of the yogurt mixture, gently stir, and repeat two more times).
- Now, fill your prepped pan โ of the way using the mixed ingredients from the mixing bowl. Sprinkle ยฝ of the streusel over this. Add the remaining batter to the pan and top with the remaining streusel.
- Bake this for 15-18 minutes or until there is some light browning. Then allow the cake to cool before serving.
Streusel Topping.
- In a medium bowl, you can combine together the flour, brown sugar, and cinnamon.
- Then cut your butter into the mixture.
- Finally, mix just until crumbly and no further.

This cake uses plain Greek Yogurt. The Greek yogurt not only adds flavor, it also adds moisture and helps to make a more fluffy texture to the cake.
