This coffee cake tastes like a a sweet and buttery fluffy delight with a swirl of sweet cinnamon mixed in.

That cinnamon coffee cake is based upon a traditional coffee cake that has been around for a long time. This coffee cake, on the other hand, has a totally different flavor thanks to the Greek Yogurt that is added to it.

Let me start by saying that this cake does not have coffee in it.
Thus, the coffee cake name has nothing to do with the added ingredients.
Instead, coffee cake got its name because of how it is served.

How to make sugar free streusel for this coffee cake.
Ingredients needed.
- Flour (AP)- ⅔ cups.
Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour. - Brown Sugar Alternative- ⅓ Cup Equivalent to sugar.
- Ground Cinnamon with no added sugar- 2 teaspoons.
- Butter- ½ stick cold and cut up into chunks.
To make the topping.
- In a medium bowl, you can combine together the flour, brown sugar, and cinnamon.
- Then cut your butter into the mixture.
- Finally, mix just until crumbly and no further.
Ingredients needed to make the cake portion of this recipe.
- Cake Flour- 2 ½ cups. Don't have cake flour or using an alternative? You can try using your regular flour but, removing 4 ½ tablespoons and whisking in 4 ½ tablespoons of cornstarch. Using regular flour alone will result in a more dense cake that will taste okay.
- Baking Powder- 2 teaspoons.
- Baking Soda- ½ teaspoon.
- Salt- ½ teaspoon. Omit this if your butter has salt in it.
- Vanilla Extract- 2 teaspoons.
- Greek Yogurt- 1 ½ cups. Buttermilk can be used however, to keep this more authentic, use the Greek Yogurt (full).
- Butter- 12 tablespoons at room temperature. That is a stick and a half. Unsalted is preferred.
- Sugar Alternative- 1 ¼ cups. The sugar alternative should be granular, measure 1:1 with sugar, and be able to be baked with.
- Eggs- 3, also at room temperature.
How to make Sugar Free Copycat Starbucks Coffee Cake.
- Preheat your oven to 300 and prep a square baking pan or a loaf pan for nonstick.
- Make the streusel as indicated above.
- In a medium bowl, use a whisk or a fork to mix together your flour, baking powder, baking soda, and salt. Set this bowl aside.
- Next, in another bowl use a fork to mix together the Greek yogurt and the vanilla extract
- In a large mixing bowl, mix together the butter and sugar alternative until fluffy without over-mixing it. Then scrape down the bowl and stir in one egg. Lastly, repeat this two more times until all three eggs have been added.
- For the next step we will add the ingredients from the bowl with dry ingredients and and the bowl with the yogurt to the mixing bowl with the eggs. This is done three times which means you will need to add ⅓ of each of the bowls to the bowl with the eggs, gently stirring between additions. (Start by adding ⅓ of the flour mixture and ⅓ of the yogurt mixture, gently stir, and repeat two more times).
- Now, fill your prepped pan ⅓ of the way using the mixed ingredients from the mixing bowl. Sprinkle ½ of the streusel over this. Add the remaining batter to the pan and top with the remaining streusel.
- Bake this for 15-18 minutes or until there is some light browning. Then allow the cake to cool before serving.
