For this recipe, I like a cookie that is a bit more tart as there is a 'sweet' glaze on top of the cookie. However, if you choose to not add a glaze, you could go with about any apple that can hold up to baking.
Good choices for an apple that may work in this recipe include Jonagold, Granny Smith, and Gala Apples. You could however, use a mix of apples for additional flavor.
This recipe has no added sugar in it. That is, we are using sugar alternative in place of any added sugar.
For this recipe you will need about one medium apple which has around 19 grams of natural sugar in it. For the cookies you will need a brown sugar alternative and for the glaze, you will need a sugar free powdered sugar.
Here are some tips for making apple cookies.
This recipe works best using more of a tart apple that can be baked with. Granny Smith, Pink Ladies, Jonathan, Fuji, and Gala apples are also good choices.
Here are some more helpful tips for you.
- My cookies were made using all purpose flour. Oatmeal can be substituted for part of the flour for a more chewy cookie.
- While these cookie are made using apples, there are other fruits that can work in this recipe. Pears are a good choice.
- Adding the glaze while the cookies are still warm can help the glaze spread better over the cookies. You can also top this with chopped nuts.
How to store apple cookies.
Since this is a softer cookie, they should be stored loosely covered rather than in an air tight container. I would refrigerate these cookies as well.
