- Use a cookie scoop to make the truffles a uniform size. A medium sized cookie scoop works well with this recipe.
- If the dough gets sticky when you are rolling out the truffle balls you can refrigerate them for a few minutes to harden up a bit. Another option is to spray a bit of nonstick on the scoop or your hands.

This is a no bake recipe which makes them even better.
It takes about ten minutes of actual work time to make this recipe.
This is basically a two part recipe.
The first part is combining the crushed cookies, pumpkin puree, and other ingredients to form a ball. Then we will melt the white chocolate chips to coat the balls.
Ingredients needed to make sugar free pumpkin truffles.
- Sugar Free Cookies. Select a cookie that is like a Biscoff wafer. Sugar free biscuit or vanilla wafer for example.
- Sugar Free Powdered Sugar. This is used as a sweetener to balance other flavors with.
- Pumpkin Spice. This spice helps make this recipe taste so seasonal.
- Cinnamon. Also an essential spice needed for this recipe.
- Cream Cheese. The cream cheese should be softened to room temperature as it is used to hold the ingredients together.
- Pumpkin Puree This is our source of pumpkin.
- Sugar Free White Chocolate Baking Chips. If you can find unsweetened almond bark, you can use that instead.
How to make Sugar Free Pumpkin Spice Truffles

- Start by lining a rimmed baking sheet with parchment paper. The baking sheet should be able to fit into your freezer.
- Next, crush the cookies into crumbs. You can use a food processor or zip top bag with a rolling pin to do this. Then transfer the crushed cookies to a mixing bowl.
- In small bowl, use a fork or a whisk to combine the pumpkin spice, sugar free powdered sugar, and cinnamon. Then mix this in with the crumbs in the first bowl.
- Use a rubber spatula to blend in the cream cheese and the pumpkin with the ingredients in the bowl.
- When you are able to form balls, use a cookie scoop to scoop out the ingredients, further rolling them into balls using your hands as needed. Then place the rolled balls on to the prepared baking sheet. The truffle balls should be about one to 1 ½ in in diameter. Place the baking sheet in the freezer for about a half hour to set.
How to coat sugar free truffles with chocolate.

- Melt the chocolate as indicated on the packaging. I like to place mine in a microwave safe bowl and microwave, stopping every 30 seconds to stir, until creamy. You can stir in the optional coconut oil instead to help the texture.
- Use a spoon, skewer or fork to dip each of the truffle balls into the melted chocolate. You can use an additional spoon in your other hand to help cover each of the truffles with the melted chocolate. Then place the covered truffles on to your prepped baking sheets.
- Sprinkle any optional crushed cookies on top of the truffles and refrigerate until set (about an hour)
