Ingredients needed:
- Almond Flour-1 ½ cups
- Sugar Alternative such as granulated monk fruit- ¼ cup (or sugar or erythritol)
- Butter- ¼ cup melted
- Ground Cinnamon -½ tsp
How to make the crust.
Preheat the oven to 350F and prep a square cake pan with parchment paper that overhangs the edges.
Combine the ingredients for the crust until it reaches a crumbly consistency. Then transfer the mixture into the prepped cake pan, pressing it into place. Bake the crust for 8-10 minutes or until lightly golden, then allow it to cool.
Ingredients needed to make keto cheesecake.
- Crust- 1 as prepared above.
- Cream Cheese- 16 ounces, softened to room temperature.
- Sugar Alternative such as granulated monk fruit- ⅓ cup. Please use a granular alternative that measures 1:1 with monk fruit and that can also be baked with.
- Pumpkin Puree- ¾ cup, at room temperature.
- Eggs-2
- Ground Cinnamon- 1 teaspoon.
- Vanilla Extract- 1 teaspoon.
How to make Sugar Free Keto Pumpkin Cheesecake
- Bake the crust as indicated above.
- Beat together the softened cream cheese with the sugar alternative until smooth. Then add the pumpkin puree, eggs, cinnamon and vanilla and mix by hand until just combined.
- Transfer the mixture to the baked crust, shaking it gently back and forth to remove any air bubble. Bake for 30-35 minutes or until the cheesecake is almost set in the middle. Turn off the heat and allow the cheesecake to sit in the closed door oven for ten minutes. Then prop the door open allowing the oven to get to room temperature.
- Refrigerate the cheesecake for at least an hour to set. Overnight in the refrigerator is really optimal.
