This is a potato-free version of the popular Hanukkah latkes.

This recipe is is a low carb potato free latkes that would probably also work in an air fryer.

Technically, a latkes is a potato pancake that is eaten during the 'Festival of Lights ' or Hanukkah.
Made with grated potatoes, these potato pancakes are often dipped in apple sauce or sour cream.

There are many variations to the common latkes or potato pancake.
These variations can be due to how they are cooked or the ingredients that are added.
In this variation, we are omitting the potato and using cauliflower instead.

 

You may be wondering what are the benefits of eating cauliflower.

In this recipe, possibly the biggest benefit is that the cauliflower is not potatoes.
This is true for anyone allergic to potatoes, does not want the carbohydrates from potatoes, or maybe just does not like the taste of potatoes.

Cauliflower is a great source of potassium and even has some protein in it.
When it comes to carbohydrates, an entire head of cauliflower nets out at around 17 grams.

Yes, you could 'cheat' and use already made cauliflower rice. I suggest that you use florets that are steamed (see instructions) however because of to minimize the water that may be absorbed.

  1. This recipe can also be made using other vegetables. You can replace the cauliflower with broccoli for example.
  2. Feel free to personalize these pancakes by adding additional ingredients. Chopped onions would go great in these pancakes!
  3. These cauliflower pancakes can also work as a flatbread. Simply make them the size that you need to make a bread for a sandwich or as a base for a pizza.
  4. You can serve these low carb keto friendly cauliflower pancakes or latkes with your favorite dips. They can also be served on the side of a salad or soup.

 

How to store these cheesy cauliflower pancakes.

Leftover cauliflower pancakes should be kept in an air tight container. They should keep for up to four days refrigerated or a month frozen if properly stored.

How to prepare the cauliflower for pancakes.

Start by breaking the cauliflower florets off from the cauliflower head.
Boil or steam the cauliflower until fork-tender.

Allow the cooked or steamed cauliflower to fully cool.

To remove the excess water from the cooled cauliflower allow for the cooked cauliflower to drain on a stack of paper towels or clean kitchen towels. Pressing or squeezing excess water from the cauliflower may also be helpful as needed.

Ingredients needed to make low carb latkes pancakes.

  • Cauliflower- 1 head. The cauliflower should be steamed and drained as mentioned.
  • Eggs- 2.
  • Mozzarella- ½ cup shredded.
  • Almond Flour- ¼ cup plus additional as needed (up to ⅓ cup).
  • Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.

 

How to make Keto Pancakes.

 

  • Prepare the cauliflower as indicated above. Allow the cooled cauliflower to drain. Then use a potato masher as needed to break up any larger chunks of cauliflower.
  • In a mixing bowl, beat the eggs with any seasonings that you would like to add. Then stir in the cooled in the cooled and drained cauliflower.
  • Next, add a quarter cup of almond flour to the bowl and stir. If the mixture needs more almond flour, add it a tablespoon at a time, up to a third of a cup total. Then fold in the mozzarella.
  • Preheat a large skillet over medium heat, prepped as needed for nonstick (oil or spray). Cook the pancakes until just browned on bother sides before serving.
