How to prepare the cauliflower for pancakes.
Start by breaking the cauliflower florets off from the cauliflower head.
Boil or steam the cauliflower until fork-tender.
Allow the cooked or steamed cauliflower to fully cool.
To remove the excess water from the cooled cauliflower allow for the cooked cauliflower to drain on a stack of paper towels or clean kitchen towels. Pressing or squeezing excess water from the cauliflower may also be helpful as needed.
Ingredients needed to make low carb latkes pancakes.
- Cauliflower- 1 head. The cauliflower should be steamed and drained as mentioned.
- Eggs- 2.
- Mozzarella- ½ cup shredded.
- Almond Flour- ¼ cup plus additional as needed (up to ⅓ cup).
- Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.
How to make Keto Pancakes.
- Prepare the cauliflower as indicated above. Allow the cooled cauliflower to drain. Then use a potato masher as needed to break up any larger chunks of cauliflower.
- In a mixing bowl, beat the eggs with any seasonings that you would like to add. Then stir in the cooled in the cooled and drained cauliflower.
- Next, add a quarter cup of almond flour to the bowl and stir. If the mixture needs more almond flour, add it a tablespoon at a time, up to a third of a cup total. Then fold in the mozzarella.
- Preheat a large skillet over medium heat, prepped as needed for nonstick (oil or spray). Cook the pancakes until just browned on bother sides before serving.
