    Rice has a lot of carbohydrates in it which is why I prefer to make Low Carb Cauliflower Fried Rice.

    Plus, I think this cauliflower fried rice is easier to make (yay for lazy!).

    This is the perfect recipe for anyone wanting to have rice with their food.

    That is, rice with all of the carbs in it!
     

    This recipe kind of reminds me of my Four Ingredient Cauliflower Pizza Crust.

    We love making pizza with a cauliflower crust because of how healthy it is and how good it tastes!
    Since first making a cauliflower crust pizza, we have been experimenting quite a bit with cauliflower!

    I am always looking for great ideas for food storage. This is especially true when I am making a recipe such as this one and I know there will be some leftovers. Check out these great food storage ideas that I have found! I especially love anything that can easily stack in my refrigerator.

     

    You may be wondering does cauliflower fried rice taste good.

    The truth is that thanks to the other ingredients that go into this recipe, you probably will not be able to tell the difference.
    Actually, I like the cauliflower version better because it is easy to eat the next day (I hate the way rice sticks together the next day!).

    The biggest difference between actual rice and cauliflower rice could be this.

    If you know your rice well, you will instantly notice a difference in the size and texture of the cauliflower in comparison to rice.
    Personally, once the ingredients have been added, the cauliflower rice has been cooked, and then paired with other foods, I cannot even notice the difference. But, that is me 🙂 !

     

    Here is how to prepare cauliflower for this cauliflower rice recipe.

    I suggest using a fresh head of cauliflower that is of average to large in size.
    Remove the florets from the stem of the cauliflower and then discard the center core.

    I like to make sure that the florets are pretty uniform in size.

    That is, after removing the florets from the cauliflower head, you may need to trim them in size to make your process more efficient.
    Cutting the florets into one inch to one and a half inch size is easiest to work with.
     

    Here are some tips for making this recipe for low carb fried rice.

    I just mentioned that the cauliflower should be prepared by first removing the florets from the stem and then discarding of the center (or sharing it with your compost like I like to do 🙂 ). The florets should be trimmed to a one to one and a half inch size.

    Here are some more helpful tips for you.

    1. This recipe can be made in a large skillet or a wok. You should probably use what you feel most comfortable using since it could take you a couple of tries to make this recipe to your liking.
    2. The secret to making this recipe is to have a really warm to hot skillet (or wok) and to keep the ingredients moving while they cook. Kind of like in those cool restaurants.
    3. Resist the urge to keep the cauliflower cooking for too long as it will become tender. The trick is to cooking this is fast and hot.
    4. This recipe can be made in a food processor. However, I am a huge fan of my Vitamix Blender and like to use that sometimes. Folks without a food processor or strong blender can try using a simple grater instead.
    5. This recipe does not call for meat, fish, or chicken as these are commonly enjoyed with fried rice. Feel free to add some to your fried rice if you desire to.

     

    Here is how to store cauliflower rice.

    This cauliflower rice should be kept in an air tight container in the refrigerator. It is best to eat the rice within a few days before it gets too soft to enjoy.

    I mentioned earlier the cauliflower should be prepared by first removing the florets from the stem and then discarding of the center (or sharing it with your compost like I like to do 🙂 ). The florets should be trimmed to a one to one and a half inch size.
     

    Also mentioned, this recipe can be made in a food processor.

    However, I am a huge fan of my Vitamix Blender and like to use that sometimes. Folks without a food processor or strong blender can try using a simple grater instead.

    The ingredients needed to make this cauliflower fried rice recipe.

     

    • Cauliflower- 1 head prepared as directed above. That is, after removing the florets from the cauliflower head, you may need to trim them in size to make your process more efficient. Cutting the florets into one inch to one and a half inch size is easiest to work with. A cheat for this is to use cauliflower that has already been grated into rice form (five cups should work).
    • Canola Oil- 1 ½ tablespoons, divided. You can sub in a high burning point oil such as corn oil, peanut oil, or safflower oil.
    • Eggs- 2 whisked or beaten. You can use a vegan egg alternative or tofu (firm, 6-7 ounces).
    • Ginger- ½ tablespoon minced or grated.
    • Garlic- 3 cloves minced.
    • Mixed Vegetables- 1 cup total. I say 'mixed vegetables' because those small bags of frozen peas and carrots are peeeeerrrrrfffect in this recipe!
    • Soy Sauce- 3 tablespoons. Can use tamari instead.

    How to make Low Carb Cauliflower Fried Rice recipe.

     

    • Prepare your cauliflower by grating it. You can do this in batches in a food processor, Vitamix Blender or similar strong blender or using a simple grater
    • Preheat a large skillet or a wok on medium-high heat along with ½ tablespoon of the oil.
    • Add the eggs to the skillet and cook until scrambled. Transfer the eggs to a clean plate.
    • Next, add the remaining oil to the skillet along with the ginger, garlic, and vegetables. Cook this until the vegetable appear to become tender- a couple of minutes.
    • Stir in the cauliflower, reduce the heat to medium, and cover. You will need to stir as needed. When the cauliflower seems tender (5-8 minutes) stir in the soy sauce and then the eggs. Remove from heat and serve. Feel free to add additional sauce as needed.

      This recipe is a winner! I made it last night for supper, along with the Keto Sweet and Sour Chicken...my daughter served herself a small spoonful and said it was delicious. I told her it was cauliflower fried rice...and she could not believe it. She quickly served herself more and even took leftovers for lunch today.
      My husband loved it too...thought it was actual rice as well....
