Homemade Cauliflower Tortilla Wraps
This is a great alternative to the usual homemade tortilla or wrap.
I like the idea of getting a vegetable into my meal as well.
This is a simple recipe that only takes a few ingredients to make.
The trick to the success of making this recipe lies in the cauliflower itself. As far as the taste goes, the trick is to use the right seasonings for what you are intending to use it for.
Cauliflower is indeed the main ingredient for this recipe.
However, the cauliflower needs to be grated as fine as possible. Using a food processor is a good way to get the intended result needed for this recipe.
To prepare the cauliflower you will need to first get it grated or processed to a rice-like size.
Next, you will need to bake the cauliflower until it is tender. The easiest way to do this is to put it into a microwave on high. It should take between four to four and a half minutes, stopping to stir midway, for it to become tender.
You will need to drain the cauliflower after it has been cooked.
Once the cauliflower has become tender and cooled enough to touch, you can drain it. Use a clean kitchen or similar towel and simply spread the cauliflower out on the towel. Then you can wring or squeeze the liquid out into the towel. I let the cauliflower sit on the towel for at least five minutes to get the liquid out.
However, there is an easy cheat if you do not want to go through all of this cauliflower prep.
Cauliflower 'rice', which can be easily found online. YAY!

- Eggs- 2 beaten.
- Seasonings, such as salt, pepper, dill,
Old Bay, or my favorite, Trader Joe's Everything but the Bagel Sesame Seasoning Blend . The amount is to taste and will vary according to the seasoning and you tastes as well.
How to make Homemade Cauliflower Tortilla Wraps
- Please follow the directions above for preparing your cauliflower. The cauliflower will need to be cooked until tender and then drained before it is be used in this recipe. This will help to assure the success of your tortillas.
- When you are ready to make your cauliflower tortillas, start by preheating the oven to 400 and prepping your baking sheet for nonstick. Using parchment paper is probably the best way to prep the baking sheet for this recipe.
- Next, place your drained and prepared cauliflower in a mixing bowl.
- In a smaller bowl, whisk together the eggs and your chosen seasonings. Gradually add this to the cauliflower bowl, half at a time, stirring between the addition.
- When you are able to work this into shapes, roll out portions into a ball and then flatten that ball into a circle onto your prepped baking sheet. Your flattened balls should be about 3", yielding you between six and seven flattened tortillas total.
- Bake the tortillas for ten minutes and then flip them over. Continue baking for an additional seven to eight minutes or until they seem set.
To use these tortillas later or to brown them, simply heat for a minute or so on each side in a skillet over medium heat.
