This truffle recipe is like a tasty recipe for bite sized carrot cake.
Even better, this is no added sugar in this recipe!

Did you try my Sugar Free Carrot Cake recipe?

That carrot cake recipe has been very popular on this site.
Both this truffle recipe and that carrot cake recipe are tasty ideas that have real carrots and no added sugar!

This recipe calls for pecans that have been ground up. You can find ground pecan nuts here.

So what exactly are truffles?

When it comes to food, there are really two kinds of truffles.
These truffles have nothing to do with one another too.

The truffles in this recipe are a dessert or snack rather than a kind of fungus.

I like to think of truffles as bite sized pieces of cake.
Sometimes protein or energy balls are like truffles too.

People do ask is truffle keto friendly.

I always tell people that anything is keto friendly as long as the ingredients that are in it are too.
If you are adding sugar as an ingredient, then truffles and anything else are not keto friendly.

The sugar in this recipe comes from the carrots.

That sugar from carrots is a natural sugar.
The average carrot has about four net carbs and there are two carrots used in this recipe.

Here are some tips for making truffles.

Make your carrot truffles even better by dipping them in melted sugar free white chocolate chips. Simply melt the chocolate chips in a microwave safe bowl using the directions on the packaging and use a fork or spoon to dip and coat the truffles.

More tips for you.

  1. Roll these carrot cake truffles in shredded coconut for added flavor and texture.
  2. This recipe calls for coconut flour. If you are considering using an alternative keep in mind that coconut flour does not measure 1:1 with most flours in recipes and that many flours should not be consumed raw. It is always best to refer to the packaging for details on use.
  3. I am using cashew butter in this recipe. Feel free to use the nut butter of your choice as long as there is no added sugar in it. You can even make your own like I usually do. 🙂

How to store carrot cake truffles.

These truffles should be stored in an airtight container.
If properly stored and refrigerated they should last for about a week.

  • Blend together the cashew butter with the monk fruit, vanilla and cinnamon. You can do this in a mixing bowl or food processor.
  • In a large bowl, use a fork or whisk to mix together the coconut flour with the ground pecans. Then stir in the blended ingredients from the last step (cashew butter etc.).
