So what exactly are truffles?
When it comes to food, there are really two kinds of truffles.
These truffles have nothing to do with one another too.
The truffles in this recipe are a dessert or snack rather than a kind of fungus.
I like to think of truffles as bite sized pieces of cake.
Sometimes protein or energy balls are like truffles too.

Make your carrot truffles even better by dipping them in melted sugar free white chocolate chips. Simply melt the chocolate chips in a microwave safe bowl using the directions on the packaging and use a fork or spoon to dip and coat the truffles.

- I am using cashew butter in this recipe. Feel free to use the nut butter of your choice as long as there is no added sugar in it. You can even make your own like I usually do. 🙂

The recipe for carrot cake truffles.
This is a simple recipe for making bite sized carrot truffles that taste like carrot cake.
There is no added sugar in this recipe.
To make this recipe you will need two grated carrots.
For best results, the carrots should be grated as fine as possible.
The truffles can be topped with a variety of choices including melted sugar free white chocolate chips.
Ingredients needed to make
- Carrots- 2 average sized. The carrot will be grated to make one cup.
- Cashew butter- 1 cup, no added sugar. You can use another nut butter if desired however, please keep the nut butter sugar free if possible.
- Powdered Monk Fruit- 2 tablespoons. Another sugar free powdered sugar alternative can be used.
- Vanilla Extract- ½ teaspoon.
- Ground Cinnamon- 1 teaspoon.
- Coconut Flour- ⅓ cup plus one tablespoon. If you are subbing in another flour please make sure that the flour is suitable for consuming raw and measures 1:1 with coconut flour.
- Pecans- 1 cup ground.
- Optional toppings such as melted sugar free white chocolate, chopped nuts, or coconut.
How to make Sugar Free Carrot Cake Truffles.
- Start by finely grating the carrots. Place the grated carrots on clean paper towels or clean kitchen towel to drain while you work. Also, prepare a rimmed baking sheet with parchment paper for setting your truffles on to.
- Blend together the cashew butter with the monk fruit, vanilla and cinnamon. You can do this in a mixing bowl or food processor.
- In a large bowl, use a fork or whisk to mix together the coconut flour with the ground pecans. Then stir in the blended ingredients from the last step (cashew butter etc.).
- When the mixture is able to stick together use your hands to form 1- 1 ½" balls. Set each of the balls on to the prepared baking sheet. If you are topping the truffles with something dry such as chopped nuts or coconut, simple place the topping in a shallow bowl or on a large plate and roll the truffle ball around in it to cover. Place the truffles in the refrigerator until set (15-20 minutes).
- To top the truffles with melted sugar free white chocolate, simply use a fork to dip each of the truffles into the melted chocolate and then place it back on to the baking sheet. Return the truffles to the refrigerator until set.
