- Start by finely grating the carrots. Place the grated carrots on clean paper towels or clean kitchen towel to drain while you work. Also, prepare a rimmed baking sheet with parchment paper for setting your truffles on to.
- Blend together the cashew butter with the monk fruit, vanilla and cinnamon. You can do this in a mixing bowl or food processor.
- In a large bowl, use a fork or whisk to mix together the coconut flour with the ground pecans. Then stir in the blended ingredients from the last step (cashew butter etc.).
- When the mixture is able to stick together use your hands to form 1- 1 ยฝ" balls. Set each of the balls on to the prepared baking sheet. If you are topping the truffles with something dry such as chopped nuts or coconut, simple place the topping in a shallow bowl or on a large plate and roll the truffle ball around in it to cover. Place the truffles in the refrigerator until set (15-20 minutes).
- To top the truffles with melted sugar free white chocolate, simply use a fork to dip each of the truffles into the melted chocolate and then place it back on to the baking sheet. Return the truffles to the refrigerator until set.

Tips for making the best carrot cake truffles.
Make your carrot truffles even better by dipping them in melted sugar free white chocolate chips. Simply melt the chocolate chips in a microwave safe bowl using the directions on the packaging and use a fork or spoon to dip and coat the truffles.
More tips for you.
- Roll these carrot cake truffles in shredded coconut for added flavor and texture.
- This recipe calls for coconut flour. If you are considering using an alternative keep in mind that coconut flour does not measure 1:1 with most flours in recipes and that many flours should not be consumed raw. It is always best to refer to the packaging for details on use.
- I am using cashew butter in this recipe. Feel free to use the nut butter of your choice as long as there is no added sugar in it. You can even make your own like I usually do.
How to store truffles.
These truffles should be stored in an airtight container.
If properly stored and refrigerated they should last for about a week.
