This is a simple recipe for making cream cheese based truffle treats.
These truffles are friendly to sugar free, keto, low carbohydrate, and gluten free diets!

You may be wondering can you eat raw coconut flour.
It is true that it may be unsafe to eat regular all purpose flour.
This is because the flour may have bacteria that needs to be baked off.
However, coconut flour is made from coconuts.
When eaten in moderation, unsweetened coconut is useful in recipe as a fat especially in fat bombs and baking. However, always look for the unsweetened coconut version.
Can you substitute flour for coconut flour?
Coconut flour is made from a process of baking coconut meat, that has been separated from the milk, and then grounding it into 'flour'. Because of its consistency, coconut flour can be used in recipes that may call for all purpose flour.
The good news about coconut flour is that it is plant based and friendly to Gluten Free, Vegan, Paleo, Keto and Organic recipes.
Coconut flour is also high in fiber and healthy fats as well as having protein in it. Unlike some other flour alternatives, coconut flour is not measured 1:1 with other flours.

It is best to use cream cheese that has been softened to room temperature for this recipe.
This will make it easier to combine the cream cheese with the other ingredients.

- The ingredients can become sticky while you form the truffles. Try refrigerating the ingredients for a few minutes or spraying your hands with nonstick to make it easier to form your truffles.
- Make this a boozy recipe. Simply add up to a tablespoon or so to the mixture (you may need to adjust the coconut flour).
- I am using dark chocolate in this recipe. Feel free to use any kind of chocolate that you prefer including white chocolate.
How to store cream cheese truffle balls.
These truffles should be stored covered in the refirgerator.

This is a simple recipe for making sugar free, keto, low carbohydrate truffles.
The truffles are flavored and held together with cream cheese.
Here are some topping ideas that you can use for your truffles.
- Melted Chocolate.
- Shredded Coconut.
- Sugar Free Powdered Sugar.
- Chopped Nuts.
- Unsweetened Cocoa Powder.
Ingredients needed to make these sugar free truffles.
- Cream Cheese- 8 ounces. The cream cheese should be softened to room temperature.
- Unsweetened Cocoa Powder- 2 tablespoons.
- Coconut Flour- 2 tablespoons.
- Sugar Free Chocolate Chips- 1 cup.
- Walnuts- 1 cup chopped.
- Optional- liquid stevia (1 teaspoon), vanilla extract (1 teaspoon), or sugar free powdered sugar (as needed).
How to make Sugar Free Cream Cheese Truffles
 
- Place the cream cheese in a mixing bowl and use a fork to smooth it out. Then stir in the coconut flour and the unsweetened cocoa powder.
- Melt the chocolate chips according the packaging directions. I place mine in a microwave safe bowl to melt, stopping every 30 seconds to stir. Allow the melted chocolate to cool for a couple of minutes before blending it into the ingredients in the mixing bowl. Fold in the chopped nuts and the place the bowl into the refrigerator to thicken (about an hour).
- When you are ready to make the truffles, line a rimmed baking sheet (that can fit into a refrigerator) with parchment paper and prepare the coating or toppings that you plan on using. You can place dry ingredients in individual shallow bowls to make it easier to roll the truffles in.
- Use a scoop to scoop out the first truffle from the refrigerated bowl and use your hands as needed to form it into a ball. Then roll the truffle around in the dry ingredients in the shallow bowl(s) before placing it on to the prepare baking sheet.
- When all of the truffles are completed, refrigerate the truffles until set and before serving.
