Unlike my recipes that are made using a mixer, the order of ingredients are different and, should be followed as directed in the instructions.
To make this recipe you will need bananas are ripe.
Before adding the bananas you may want to break them in half or thirds to make blending a bit easier.
Also, while I am using monk fruit, you can use the sugar alternative of your choice.
Ingredients needed to make banana oatmeal muffins with no added sugar or flour.
- Milk-⅓ cup. The more fat in your milk, the more moist your muffins will be. Vegan milk should work in this recipe as an alternative.
- Eggs- 2. Vegan folks can use vegan egg replacement.
- Greek Yogurt- ½ cup, unsweetened. Vegan alternative can be a vegan yogurt that can be baked with or coconut cream.
- Bananas- 2. The more ripe, the better for blending.
- Golden Monk fruit- ¼ cup.
- Baking Powder- 1 ½ teaspoons.
- Also, Baking Soda- ½ teaspoon.
- Cinnamon- 1 teaspoon.
- Old Fashion Rolled Oats- 2 ¼ cups.
- Chopped Walnuts- ¼ cup plus additional for topping as needed .
How to make Sugar Free Flourless Banana Muffins
- Preheat your oven to 375. Prep muffin pan well for nonstick. I use liners and then I give the ma quick spray with nonstick.
- In a strong blender, place all of the ingredients listed above in the order that they are listed in. It is important that your follow the order as the liquid ingredients need to be on the bottom. Do not add the walnuts however.
- Give the blender a couple of pulses. Then blend normally until the batter is smooth. You can then stir in the walnuts by hand.
- Pour the blended ingredients into the prepared muffin pan, filling each about ¾ full. Top with the remaining walnuts.
- Bake for 18-20 minutes or until the muffins begin to brown or a toothpick comes out clean. Then allow the muffins to cool before removing them from the pan.
