This sugar free oatmeal bar recipe is based upon a standard oatmeal bar.
However, in this recipe there is no added sugar.
These oatmeal bars are chewy and full of delicious flavor.
To make these chocolate chip oatmeal bars you will need calls for old fashion or rolled oats..
You will also need sugar free chocolate chips.
Ingredients needed to make sugar free oatmeal bars.
- Old Fashion Rolled Oats- ¾ cup.
- Flour- 2 cups.
- Baking Soda- 1 teaspoon.
- Butter- ¾ cup. The butter should be softened to room temperature. If you are using unsalted butter, add ½ teaspoon of salt the dry ingredients.
- Brown Sugar Alternative- 1 ¼ cup. Please use a granular brown sugar alternative that measures 1:1 with sugar for best results.
- Egg- 1. The egg should be at room temperature.
- Egg Yolk- 1.
- Vanilla Extract- 2 teaspoons.
- Sugar Free Chocolate Chips- 2 cups total. I like using two different size chocolate chips or mixing milk chocolate with regular chocolate chips.
How to make Sugar Free Chocolate Chip Oatmeal Bars
- Preheat your oven to 325. Prep a rectangular baking pan for nonstick. I use parchment paper that slightly overhangs the edges of the pan. Then I give it a quick spray with nonstick.
- In a medium bowl, use a whisk or fork to mix together the oats, flour, and baking soda. Then in a mixing bowl, beat together the butter with the brown sugar alternative until creamy. Add the eggs one at a time, giving a quick stir between additions. Then stir in the vanilla extract.
- For the next step we will add the dry ingredients from the first bowl to the ingredients in the mixing bowl. Do this by adding half of the dry ingredients, then the other half. Mix the ingredients until just combined.
- Lastly, fold in the chocolate chips. Then evenly spread the mixture into the prepared baking pan. Bake for 20-22 minutes or until the edges begin to brown. I like like to turn the pan around after about ten minutes for even baking.
- Remove the pan from the oven and allow the bars to cool before using the extended parchment paper to life the bars from the pan to cut.
