That muffin recipe was a lot like this one as they both incorporate oatmeal. However, this recipe also has those great spices added to make it taste so good!
This recipe is especially for anyone who as asked can I add oats to muffins?
Of course, the answer to that question is yes. You can add oats to muffins.
Oats are more than just a dry ingredient when they are added to muffins.
Sure, we know that oats, or oatmeal, can be pretty healthy for us.
But, oats also add some texture and flavor to the muffins, making them taste even better!
This recipe for oatmeal muffins can be made gluten free or vegan as well.
To make this recipe gluten free use gluten free quick oats as well as gluten free flour (please check the packaging for any additional binders that may be needed).
To make this recipe for muffins vegan, you can use vegan ingredients.
For the milk that is called for in this recipe, use a vegan milk substitute such as one of these.
Also, for the egg, you can use a vegan egg alternative such as one of these.

- For best results, I tell my readers to always use fresh ingredients for the best results. This is especially true of leavening agents such as baking soda.
- Resist the urge to fill the muffin cups more than ¾ full. Doing so can cause your muffins to bake over the edges of the cups and onto the pan, a pain to clean up.

What you will need to make this Sugar Free Oatmeal Spice Muffins
- Flour (AP)- 1 cup. Make this recipe gluten free by using gluten free flour (please check the packaging for any additional binders that may be needed).
- Baking Powder- 2 teaspoons.
- Ground Cinnamon- 1 teaspoon.
- Ground Nutmeg- ½ teaspoon.
- Milk, Buttermilk, Cream or similar dairy- 1 cup. To make these muffins vegan, use a vegan milk substitute such as one of these.
- Quick Oats- 1 cup. You can make this recipe gluten free by using gluten free quick oats.
- Vegetable Oil or Melted Butter- â…“ cup.
- Sugar Alternative - ¼ cup, granular. For best results, please use a sugar alternative that measures 1:1 with sugar and is suitable for baking with.
- Egg- 1 beaten lightly. To make these muffins vegan, you can use a vegan egg alternative such as one of these.
- Vanilla Extract- 1 teaspoon.
How to make Sugar Free Oatmeal Spice Muffins
- Preheat your oven to 350 and prep your muffin pan for nonstick. You can use nonstick or muffin liners.
- In a mixing bowl , whisk or sift together the flour, baking powder, cinnamon and nutmeg. Set this bowl aside.
- Next, in another mixing bowl stir together the milk with the oats. Set this bowl aside as well.
- Now, in a large mixing bowl, beat together the vegetable oil (or melted butter) with the sugar alternative.
- For the next step, we will add the dry ingredients from the first bowl (flour etc) to the mixing bowl. Do this by adding half of the dry ingredients at a time, stirring between additions. Do not overmix!
- Next, stir in the oatmeal with the milk and then add the egg and vanilla extract. Mix this until just blended as to avoid over mixing.
- Bake your muffins for 25-30 minutes or until they begin to brown or a tootpick comes out clean.

Out of curiosity why are the egg and vanilla not mixed in with the oil and sugar, or with the milk prior to adding the oats?
