This is a great tasting muffin that has oatmeal in it too!

I like the extra flavor in these muffins that comes from the spices that are added to them.

A while back I posted a recipe for Whole Wheat Sugar Free Oatmeal Muffins.

That muffin recipe was a lot like this one as they both incorporate oatmeal. However, this recipe also has those great spices added to make it taste so good!

This recipe is especially for anyone who as asked can I add oats to muffins?

Of course, the answer to that question is yes. You can add oats to muffins.

Oats are more than just a dry ingredient when they are added to muffins.

Sure, we know that oats, or oatmeal, can be pretty healthy for us.
But, oats also add some texture and flavor to the muffins, making them taste even better!

This recipe for oatmeal muffins can be made gluten free or vegan as well.

To make this recipe gluten free use gluten free quick oats as well as gluten free flour (please check the packaging for any additional binders that may be needed).

To make this recipe for muffins vegan, you can use vegan ingredients.

For the milk that is called for in this recipe, use a vegan milk substitute such as one of these.
Also, for the egg, you can use a vegan egg alternative such as one of these.

Tips for making this recipe for No Flour Added and Vegan Banana Oatmeal Muffins.

I just mentioned that you can make this recipe gluten free by using gluten free quick oats as well as gluten free flour (please check the packaging for any additional binders that may be needed). Also, you can make this recipe vegan by using vegan products, a vegan milk substitute and vegan egg alternative .

Here are some more helpful muffin baking tips for you.

  1. For best results, I tell my readers to always use fresh ingredients for the best results. This is especially true of leavening agents such as baking soda.
  2. Resist the urge to fill the muffin cups more than ¾ full. Doing so can cause your muffins to bake over the edges of the cups and onto the pan, a pain to clean up.
  3. Make your muffins more impressive by using an extra large muffin pan or extra small or mini muffin pan.
  4. Also, please be careful to not overmix your muffins as overmixing will cause the gluten to overreact making your muffins tough among other problems that can ruin your muffins.
  5. I mentioned above that by subsituting certain ingredients, you can make these muffins vegan friendly. This recipe calls for using one egg. For vegan replacements, this is aboug a quarter cup of mashed bananas, a quarter cup of unsweetened applesauce or a a quarter cup of blended silken tofu. You can find all kinds of egg replacers here.

Being a sugar free recipe, we will not add any sugar to these muffins. .

The ingredient listing calls for using a sugar alternative instead of sugar. For best results, please use a granulated Sugar Alternative that measures 1:1 with sugar and is suitable for baking with.

Hi- the tool which calculated the carbs says 15 grams which I would assume means net. Carbs will vary depending on the ingredients that you use. Thanks!

Out of curiosity why are the egg and vanilla not mixed in with the oil and sugar, or with the milk prior to adding the oats?

      Hi.
This is done to avoid overmixing as they do not fair as well as other ingredients do.
      thanks
