However, this peanut butter and jelly recipe is made without adding a bunch of sugar to it!

What I like about this recipe is that I can make my own sugar free peanut butter and sugar free jelly to make this.

To be honest, I should also mention that that is not all that I like about this recipe.
I like that this is a pretty healthy treat that is perfect especially for the kids to enjoy.
In addition to that, this healthy snack tastes pretty yummy as well!
People sometimes ask if peanut butter and jelly is healthy.
I like to think that is is not unhealthy when you use real peanut butter and real jelly.
This is especially true when the peanut butter and jelly do not have a bunch of extra sugar added to them.
Both peanut butter and jelly are vegan.
Also, peanut butter is low in carbohydrates, as you may already be aware of. However, my jam recipe is relatively low in carbs as well.
At this point you may be wondering if there is a difference between jelly and jam.
Certainly, both jelly and jam are fruit based and are used as spreads on bread and in sandwiches. Also, jam and jelly are made by using similar methods.
As far as this recipe goes, you can easily use either jam or jelly.

You can make this recipe even healthier by substituting in old fashion oats for half of the all purpose flour. Also,
make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour.
Make this 'keto friendly' by using a keto friendly flour.
Here are a few more great tips for you.
- Line your pan with Parchment Paper that extends beyond the sheet. Doing this will allow for you to easily remove the bars from the pan for cutting into squares.
- You can try another kind of nut butter, such as almond butter, for a different kind of taste. Simply substitute the butter in for your peanut butter.
- Refrigerate your bars before cutting if possible. This will help your bars stay intact for cutting the bars.
This yummy bar recipe really is great for more than just for making snacks.

Here is what you will need to make this recipe for Sugar Free Peanut Butter and Jelly Bars.

The ingredients that you will need for this recipe.
- All Purpose Flour- 1 ½ cups.
Make this recipe even better, bu subbing in old fashion oats for half of the all purpose flour. - Baking Powder- ½ teaspoon.
- Butter- ½ cup (1 stick) softened to room temperature. You can find vegan butter alternatives here.
- Sugar Alternative- equivalent to ¾ cup of sugar. Please use a granular sugar alternative that measures 1:1 with sugar for best results.
- Sugar Free Peanut Butter- 1 cup. Smooth works best in this recipe. Again, my recipe for sugar free peanut butter is here. Or, you can buy sugar free peanut butter here.
- Vanilla Extract- 1 teaspoon.
- Egg-1. You can find egg alternatives here.
- Sugar Free Jam or Jelly- ¾ cup. You can find my recipes for sugar free jelly is here and sugar free jam is here. You can buy sugar free jelly here
- Salted Peanuts- ¾ cup chopped coarsely.
How to make Sugar Free Peanut Butter and Jelly Bars
- Preheat your oven to 325 and prep a baking pan with Parchment Paper that hangs over the edges. Aluminum foil can alternatively be used. Give the parchment of foil a light spray with nonstick as well.
- In a medium bowl, whisk or sift the flour and the baking powder. You can set this bowl aside.
- Next, in a mixing bowl, cream together the butter with the sugar alternative. I use a paddle attachment on my mixer for this.
- Once the ingredients in the mixer are creamed together you can add the sugar free peanut butter, vanilla and eggs.
- For the next step, we will add the dry ingredients from the first bowl to the mixing bowl. Do this by adding half of the dry ingredients at a time, stirring gently between additions. Once combined you can divide the mixture in half. Place one of the halves into the freezer and then evenly spread the reaming mixture (a rubber spatula or your hands work well here) on the pan that you prepared in the first step.
- Next, spread the jelly over the dough that you have spread on your pan. Then take the remaining dough from the freezer and break off small pieces or chunks to place on top of the jelly layer. Lastly, sprinkle the chopped peanuts over the bars.
- Bake your bars for 45-50 minutes or until they begin to brown. Allow the bars to cool before you cut them. Also, use the parchment that hangs over the edges to remove the bars from the pan for cutting.

- 1 ½ cups All Purpose Flour
