What I can tell you is that Stevia is derived from nature. That is, Stevia is derived from a plant and not from chemicals in a laboratory.
There may be some negative side effects of stevia.
Like with anything else that you eat, there is always a chance that you could have an allergic reaction. Stevia has been associated with lowering blood pressure or blood sugar. However, comparing stevia with the alternatives, including sugar, you need to do what is best for you and of course, discuss any concerns with a professional.
As a sweetener, Stevia is much sweeter than sugar or other sweeteners.
This means that it takes less Stevia to obtain the same level of sweetness of sugar or other sweeteners.
As a result, using Stevia in place of sugar in a recipe is not always going to be 1:1.
It is always best to read the packaging of the Stevia product that you choose to use for this recipe.

Since this recipe calls for Stevia and not sugar, you may notice a difference.
Stevia does not caramelize the same way that sugar does. However, this difference should not have an effect on your sugar free sugared nuts.

- Stevia- 4 tablespoons of the granular or ½ cup sugar equivalent.
- Vanilla Extract- 1 ½ teaspoons.
- Water- 2 ½ tablespoons
- Salt- ½ teaspoon
- Nuts- 1 ¼ cup. I mentioned that while this recipe is focused on using peanuts, you are welcome to use any nut of your choice. That included almonds, cashews, or even mixed nuts. )
How to Make Sugar Free Stevia Coated Nuts.
- Start by prepping a cookie sheet , or similar baking sheet with sides, with Parchment Paper or foil. Set your pan aside as you will need it later on.
- In a 2-quart pot combine together the Stevia, vanilla, water, and salt. Cook this on medium until it begins to boil, stirring as it cooks.
- When your pot begins to boil, add the nuts, tossing them as you stir.
- Your nuts should somewhat caramelize, however, since you are not using real sugar, the caramelized nuts will not look exactly their sugared counterpart. Remove the nuts from the heat and carefully (as they will be hot) spread the nuts out on the cookie sheet that you prepped in the first step of these directions. Allow to cool.
- An option, while the nuts are cooling, you can sprinkle additional sweetener, smaller seeds, or cinnamon on them for additional tastes.

Ingredients
- Stevia- 4 tablespoons of the granular or ½ cup sugar equivalent.
- Vanilla Extract- 1 ½ teaspoon

Instructions
- Prepare a cookie sheet with sides by lining it with parchment paper. Set this aside as you will need it later on.
- In a 2 quart pot or small pan, combine the Stevia,Vanilla Water, and salt. Cook this on medium until it begins to boil. You will need to stir this as well as it cooks.
- When pot begins to boil, toss in the nuts and continue to toss until nuts appear to caramelize.
- Remove the nuts from the heat and carefully (as they will be hot) spread the nuts out on the cookie sheet that you prepped in the first step of these directions. Allow to cool.
- An option, while the nuts are cooling, you can sprinkle additional sweetener, smaller seeds, or cinnamon on them for additional tastes.
