You may be wondering what kind of bread should be used for French toast.
In a regular French toast recipe, it is desirable that you use a bread that is dense enough to soak up the milk and eggs. Brioche or Challah bread are great choices for French toast made in a skillet.
This recipe for muffins works best with a dense bread that can be sliced thin.
While we need a bread that can soak up milk and eggs, we also need a bread that can be cut or torn into smaller pieces to fit into a muffin cup. A slice country style toast for example, is a good choice for this recipe.

How to make this a keto low carb French toast muffins.
This recipe, as is, is a sugar free recipe.
However, it is not a keto low carbohydrate friendly recipe.
To make this a keto low carbohydrate friendly recipe, make the following substitutions, making adjustments as needed.
- Use low carbohydrate bread- about eight cups of torn or cut pieces.
- Cream cheese instead of bananas- 4- 6 ounces, somewhat softened. This is for texture.
- Unsweetened Almond milk, heavy whipping cream, unsweetened coconut milk, or a combination instead of the milk.
Ingredients needed to make oven baked French Toast Muffins.
- Bread- 8 cups of a thick bread. This should be about eight to 10 slices when torn or cut into pieces, depending on the bread you choose to use.
- Eggs- 5.
- Milk- 2 cups.
- Sugar Free Maple Syrup- ¼ cup plus additional for serving.
- Cinnamon- 1 teaspoon or as desired.
- Bananas-2. Use older bananas that are softer.
How to make Sugar Free Baked French Toast Muffins.
- Preheat your oven to 350 and prep your muffin pan for nonstick.
- Cut or tear your bread into ¾ to 1" sized cubes and place them into a shallow baking dish or large bowl.
- In a mixing bowl, use a whisk or fork to combine together the eggs, milk, syrup and cinnamon.
- In another bowl or location of choice, use a potato masher or tool of choice to mash the bananas. Then blend the mashed bananas into the mixture in the mixing bowl. Once blended you can pour these ingredients over the bread, covering the bread well. You may need to use a fork to move the bread around or spoon to fully cover the bread with the mixture. Allow this to sit for five minutes.
- Evenly distribute the soaked bread pieces into the prepped muffin pan.
- Bake the muffin for 20-25 minutes or until they begin to brown.
- Allow the muffins to sit in the muffin pan for five minutes to set before removing them to serve. Serve with additional sugar free syrup, sugar free powdered sugar, or as desired.
