    It is really a lot about the idea and convenience of being able to serve individually sized portions of French toast as a muffin.

    I like that these muffins can be topped with sugar free syrup, chopped nuts, or even a bit of Sugar Free Whipped Cream!

    That French toast recipe is more of a traditional stove top French toast recipe and is flavored like a churro. This recipe is baked in an oven similarly to a muffin recipe.

    Sugar Free Baked French Toast Muffins

    Ingredients needed to make oven baked French Toast Muffins.

    • Bread- This should be about eight to 10 slices when torn or cut into pieces, depending on the bread you choose to use. Thicker bread works well in this recipe.
    • Eggs- Your eggs should be at room temperature.
    • Milk- Using a full-fat milk can make this recipe more rich in texture.
    • Sugar Free Maple Syrup- Added for flavor.
    • Ground Cinnamon- Adds a touch of flavor to these muffins.
    • Bananas- The bananas should be mashed.

    How to make French Toast Muffins.

    1. Preheat your oven to 350 and prep your muffin pan for nonstick.
    2. Cut or tear your bread into ยพ to 1" sized cubes and place them into a shallow baking dish or large bowl.
    3. In a mixing bowl, use a whisk or fork to combine together the eggs, milk, syrup and cinnamon.
    4. In another bowl or location of choice, use a potato masher or tool of choice to mash the bananas. Then blend the mashed bananas into the mixture in the mixing bowl. Once blended you can pour these ingredients over the bread, covering the bread well. You may need to use a fork to move the bread around or spoon to fully cover the bread with the mixture. Allow this to sit for five minutes.
    5. Evenly distribute the soaked bread pieces into the prepped muffin pan.
    6. Bake the muffin for 20-25 minutes or until they begin to brown.
    7. Allow the muffins to sit in the muffin pan for five minutes to set before removing them to serve. Serve with additional sugar free syrup, sugar free powdered sugar, or as desired.

    Tips for making the best French toast muffins.

    Just as with regular French toast, using a more dense and thick bread that is older or somewhat stale is desirable. Not only is a more stale bread easier to cut into pieces, it is also better for soaking up the wet ingredients in this recipe.

    Here are some more helpful tips for you.

    1. Make these into supersized muffins. Use a large or jumbo muffin pan.
    2. Or, you can make this into mini-muffins. You will need to cut the bread into smaller pieces and use mini-muffin pan to do so.
    3. Lastly, allow the muffin ingredients to sit for a few minutes before baking. This will allow for the bread to better soak up the wet ingredients.

    How to store French toast muffins.

    Once they have fully cooled, these baked muffins should be stored in an airtight container. When properly stored, these muffins should keep refrigerated for up to four days or frozen for a few months.
