To make this recipe we will first make the almond flour crust.
After the crust has been made we will combine together the cheesecake filling. Lastly, we will bake the cheesecake before serving.
Ingredients needed to make Lemon Ginger Cheesecake Bars
- Almond Flour. You can use any nut flour as desired as long as it measures like almond flour (for crust).
- Ground Ginger. Adds additional flavor to the crust.
- Sugar Alternative. Use a granular sugar alternative that measures like sugar and that can be baked with (for crust).
- Butter. Your butter should be melted as it is used to make the crust.
- Cream Cheese. For best results, use a full fat bar cream cheese that has been softened to room temperature.
- Lemon Zest and fresh lemon juice. Added for the lemon taste.
- Ground Ginger. Also added to the filling layer for flavor.
- Sugar Alternative. Again, use a granular sugar alternative that measures like sugar and that can be baked with.
- Eggs. Your eggs should be at room temperature.
How to make Sugar Free Lemon Ginger Cheesecake Bars.
Makes: 16 bars
Prep Time: 15 minutes
Bake Time: 40 minutes
Chill Time: 10 minutes + setting time.

- Start by making the crust. Preheat your oven to 350 and prep a 9X11 baking dish or pan for nonstick.
- In a medium sized mixing bowl, mix together the almond flour, ground ginger, sugar alternative and melted butter. Once the mixture is somewhat crumbly, transfer it to the prepared baking dish. Evenly press the crust ingredients into place covering the area of the baking dish.
- Bake the crust for 10 minutes (or until it begins to golden brown). Then allow the crust to cool to room temperature. Also, bump the oven temperature down to 325.
- Meanwhile, you can make the filling. In a mixing bowl, beat together the cream cheese, lemon juice, lemon zest, ground ginger and sugar alternative until creamy. Then mix in the eggs until just combined.
- Transfer the mixture from the mixing bowl to the cooled crust, evenly spreading it over the crust.
- Bake the cheesecake bars for 35-40 minutes. The edges of the bars will be brown and the center will be jiggly- which is okay.
- Allow the bars to fully cool to room temperature (takes about an hour) and then refrigerate the bars to finish setting (three hours).
- Slice and serve as desired.
