What you need to make no added sugar truffles.
- Pureed Dates. Soak and prep the dates as described above. Then use a good blender or food processor to make a paste.
- Cashew Butter. Use cashew butter that has no added sugar in it.
- Maple Extract. Yes, you can use vanilla instead of maple but, maple is really good in this recipe .
- Coconut Oil. This adds to the flavor as well as helping to make a creamy texture for these truffles.
- Chopped Pecans. Add some additional pecas that you can use as a topping if desired.
- Almond Flour. Do not use an alternative flour as most flours are not safe to eat raw.
- Optional ingredients, toppings such as melted sugar free chocolate chips for drizzling, additional chopped pecans, or shredded coconut.
How to make Sugar Free Truffles.
Prep and active time 20 minutes.
This recipe should make 20 one inch truffles if using a 1" cookie scoop.
- Start by preparing the dates, as indicated above, to make a paste using a blender or food processor (your dates will need to be pitted and soaked first). Also, line a rimmed baking sheet with parchment paper.
- Keep the date paste in your food processor or blender. Add the cashew butter, maple extract, and coconut oil to the paste. Give the ingredients a few quick pulses.
- Next, add the chopped pecans to the ingredients and give them a few more pulses to mix.
- Place the almond flour in a mixing bowl and transfer the ingredients from the blender or mixer to the mixing bowl. Use your hands to blend the ingredients together until you are able to form the dough into shapes.
- Use a 1" scoop to scoop out balls of truffles from the dough. Roll the dough between your hands to form balls and then place the balls onto the prepared baking sheet.
- Roll the balls into or top the balls with any optional toppings (such as melted chocolate or pecans). Then transfer the balls to your refrigerator to set before serving (about an hour).
Tips for making the best truffles.
This recipe calls for almond flour. Almond flour is said to be safe to be eaten raw as long as it is ground up almonds and nothing else.

- I am using sugar free cashew butter in this recipe. Feel free to use the nut butter of your choice as long as there is no added sugar in it. You can even make your own like I usually do.
- To prepare the dates you will first need to remove the pits and then soak the dates in hot water for 15 minutes in order to make the paste needed for this recipe. y
- You can easily remove the excess water from the dates by pressing each date between your fingers to release absorbed water.
- The ingredients can become sticky while you roll the truffles between your hands. Try refrigerating the ingredients for a few minutes or spraying your hands with nonstick to make it easier to form your truffles.
- Add extra flavor to your truffles by adding a bit of shredded coconut. Another option is to add a teaspoon or so of unsweetened cocoa powder to make your truffles taste a bit chocolaty too!
