Sugar Free Strawberry Muffins are really perfect this time of the year.
Making muffins with strawberries are just one more great way to eat up that yummy fruit.
Sugar Free Strawberry Muffins
These muffins are a nice alternative to the usual Sugar Free Blueberry Muffins.
Not that there is anything wrong with a great batch of blueberry muffins of course.
I think that using strawberries is just a nice take on a great idea.
Plus, they sure add a nice color to the usual muffins.
Also, I like that making strawberry muffins sure helps me use up the hoard of strawberries that I usually seem to amass when they are in season.
You may be wondering how these muffins can be sugar free if they contain strawberries in them.
After all, we can assume that since strawberries taste sweet that there must be some sugar in them.
Sweet tasting fruit does have to have some natural sweetener in them if they are sweet, right?
The truth is that strawberries do have some natural sugar in them.
However, in reality, there is not a lot of sugar in a strawberry. Each strawberry has about half a gram of sugar in them, which really is not a whole lot of sugar since we are not using a lot of strawberries in this recipe.
I am basing my Sugar Free Strawberry Muffins on that famous Ina Garten recipe that is so good.
However, her muffin recipe has a cup and a half of added sugar in it. Sadly, that is a lot of sugar to add to a batch of muffins in my opinion.
Here is how you can also make these Sugar Free Strawberry Muffins vegan by substituting your dairy.
Instead of adding the milk to your batter, simply add a nut milk such as Almond Milk.Instead of adding the eggs, use ¾ of a cup of canola oil.
We will be using a few other essential ingredients in this recipe.
This recipe calls for all purpose flour.
Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour.
The original recipe calls for ground cinnamon.
However, you could take your muffins up a notch by using a zest such as orange zest instead. The taste of a zest would certainly add a fun flavor when paired with the strawberries.
This recipe should make between 16 to 18 regular sized muffins.
However, you could make some fun mini muffins instead using a mini muffin pan. Possibly even more impressive would be to make jumbo sized muffins using a jumbo sized muffin pan!

As mentioned, you can make these muffins gluten free or lower in carbohydrates.
This recipe calls for all purpose flour.

What you will need to make Sugar Free Strawberry Muffins.
- Flour(AP)- 3 cups. Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour.
- Baking Powder- 1 tablespoon.
- Baking Soda- ½ teaspoon.
- Ground Cinnamon- 1-2 tablespoons.
- Milk- 1 ⅓ cups.
- Eggs- 2 large, beaten.
- Butter- 2 sticks (½ pound) melted.
- (Fresh) Strawberries- 2 cups, diced.
- Sugar Alternative- 1 ½ cups, equivalent to sugar. Use a granular alternative that is 1:1 with sugar in volume if possible.
How to make Sugar Free Strawberry Muffins
- Preheat your oven to 350 and prep your muffin pans for nonstick.
- In a large bowl, sift together your flour, baking powder, baking soda, and cinnamon. Make a well in the center of these ingredients and then set this bowl aside for a moment..
- Ina uses a 2 cup glass measuring cup here. In your measuring cup, or similar cup or bowl (I would stick to a glass bowl if you do not have the 2 cup measuring cup) combine together the milk, eggs, and melted butter. When mixed, pour these wet ingredients into that well you created in your dry ingredients in the first bowl. Then, stir the ingredients together until just mixed together- not over mixed. Ina says it is 'okay to have lumps'in your batter.
- Next gently stir in the sugar alternative. Then fold in the strawberries (I prefer to fold them into the batter rather than stirring them in in order to keep the strawberries intact).
- Bake for 23-28 minutes or until a toothpick comes out clean.
