Then you can simply pour the glaze evenly over the cooled brownies and allow it to harden before slicing the brownies.
To make this glaze you will need to combine the following ingredients.
- Sugar Free Powdered Sugar- one cup.
- Milk, Cream, or Water (thicker texture will yield a better glaze)- two to three tablespoons or as needed for consistency.
- Extract- ½ teaspoon. This can be vanilla extractor strawberry extract.

- Sugar Free Cake Mix- Strawberry flavored is preferred but, yellow will also work.
- Strawberries- ¼ cup pureed, plus additional as desired if you intend to top the brownies with some. To make ¼ cup of pureed strawberries you will need around four to six strawberries depending on the size of the berries.
- Vegetable Oil- ⅓ cup.
- Egg- 1.
- Cream Cheese- 1 small bar (4 ounces) softened to room temperature. This will help add moisture to your brownies.
- Strawberry Extract- ½ teaspoon. Yes, you can add additional as desired for more flavor or even use vanilla if you prefer to.
- Red Food Coloring- 1-2 drops or as desired for color.
How to make Cake Mix Sugar Free Strawberry Brownies
- Preheat your oven to 325 and prep a square baking pan with parchment paper that overhangs the edges of the pan.
- Place the cake mix in a large mixing bowl. Use a whisk or a fork to break up any clumps as needed.
- Add the pureed strawberries, oil, egg, cream cheese, and extract to the bowl and mix until just combined. Then add a drop or two of the food coloring as needed, gently blending that in until you reach your desired color, taking care to not overmix the ingredients. You may not even need to add any food coloring if your strawberries have given your brownie batter a good enough color.
- Transfer the batter evenly to the prepared baking pan and bake until a toothpick comes out clean in the center (about 20-25 minutes).
- Allow the brownies to fully cool before topping it with the icing and serving. Simply pour the icing over the brownies and allow it to harden before lifting the brownies out and cutting into servings.
