Sugar Free Banana Muffins
I have always said that there is really nothing like the smell of banana anything baking in the oven.
I can certainly agree that just about every kind of muffin smells amazing when baking in the oven. However, the smell of these tasty muffins is really something special.
You may agree that Banana Muffins are certainly a kind of muffin that people can agree upon.
This agreement could have something to do with the kind of sweet yet, yummy taste that the bananas bring to the recipe. However, most adults know that bananas are a healthy ingredient to add to about anything!
You could certainly argue that these banana muffins are a more healthy muffin, as far as muffins go.
Kids always seem to like the taste of banana muffin as well. I think that could have something to do with bananas offering almost a 'cake-like' taste and texture to the muffins.
Bananas are naturally fat free.
But, as you may also know, they are a good source of potassium, Vitamin C and Vitamin B-6.
They also make a smoothie, breakfast cereal, muffins and breads taste even better!
Bananas are often added to recipes for other reasons.
Well, we are adding banana to this recipe mostly for taste, This would be in addition to the healthy benefits jut mentioned above.
However,there are also other reasons to add bananas to our recipes.
Bananas can be substituted for fat (such as oil) in recipes because they bring moisture to the recipe.
Also, some vegan recipes call for bananas instead of eggs in recipes.
I have recently updated this recipe to make if more friendly to a variety of diets.
Folks are a bit more concerned with special diets at the moment than when I originality posted this recipe for banana muffins.
Since this is a sugar free recipe, I am posting all purpose flour to be used.
However, gluten free diet people are encouraged to use a gluten free all purpose flour such as one of these. While bananas do have carbohydrates in them, low carb diet people can use a low carb flour to keep the carbs down in their muffins. If you are using Carbquik, please omit the baking powder and baking soda from the ingredient list below.
As you would guess, we will be using real bananas in this recipe.
I would suggest using ripe bananas, the older the better in my opinion. Using ripened bananas will make it easier to mash them for use in the recipe.
The other ingredients that we will use are ingredients that you probably already have in your kitchen.
This recipe calls for vegetable oil to be used. You can use olive oil, canola oil, or coconut oil as a substitute.
Banana muffins are a popular breakfast food in my house.
Almost everyone can agree on warm banana muffins coming out of the oven in the morning. Also, leftover banana muffins make for a great snack as well.

As mentioned, I am posting all purpose flour to be used in this recipe.

Here is what you will need to make this recipe for Sugar Free Banana Muffins
- All Purpose Flour - 1 ½ cups. gluten free diet people are encouraged to use a gluten free all purpose flour such as one of these. While bananas do have carbohydrates in them, low carb diet people can use a low carb flour to keep the carbs down in their muffins. If you are using Carbquik, please omit the baking powder and baking soda from the ingredient list below.
- Baking Powder- 1 teaspoon.
- Baking Soda- 1 teaspoon.
- Sugar Alternative- ¾ cup equivalent to sugar. Granular sugar alternative is recommended.
- Bananas- 3 mashed (around a cup). Using ripened bananas will make it easier to mash them for use in the recipe.
- Egg-1, whipped. You can find egg alternatives here.
- Vegetable Oil - ⅓ cup. You can use olive oil, canola oil, or coconut oil as a substitute.
- Vanilla Extract- 1 teaspoon.
How to make Sugar Free Banana Muffins.
- Preheat your oven to 350 and prep your muffin pan for nonstick.
- In a mixing bowl, whisk together the flour, baking soda, and baking powder. Then stir in the sugar alternative that you have chosen to use.
- In a small bowl, combine together the mashed bananas, whipped egg, and the oil. Then stir in the vanilla extract.
- This is one of those recipes where we do not want to over mix the ingredients when we combine together the dry ingredients with the wet ingredients. Gently stir in the wet ingredients (bananas et al) with the dry ingredients in the mixing bowl until just mixed.
- Bake your banana muffins for 20-25 minutes or until a toothpick comes out clean.
Please note:
I have provided alternative ingredients for this recipe as well. However, because bananas 24 net carb per banana as well as about 14 grams of sugar in them by nature. Hence, this recipe cannot be made 100% sugar or carb free.

- 1 tsp Baking Powder
- 1 tsp Baking Soda
- ¾ cup Splenda
- 3 Bananas mashed
- 1 Egg whipped
- ⅓ cup Vegetable Oil
- 1 tsp Vanilla Extract
Instructions

- Bake your banana muffins for 20-25 minutes or until a toothpick comes out clean.
