How to make Sugar Free Keto Coffee Cake
Yields 9 servings
Active time 30 minutes
Baking time 30 minutes
- In a medium mixing bowl, whisk together the almond flour, baking powder, and sugar alternative. Set this bowl aside.
- Now, in a mixing bowl, separate two of the eggs, placing the egg whites in a separate bowl. Add the remaining eggs to this bowl and beat the eggs using a fork or a whisk. Then whisk in the melted butter, vanilla extract and the apple cider vinegar.
- Fold in the dry ingredients from the first bowl into the wet ingredients that are in the mixing bowl.
- In a clean mixing bowl with a clean whisk or paddle attachment, beat the eggs whites from the small bowl in step two until soft peaks form. After the soft peaks form, you can fold the egg whites into the mixing bowl.
- Preheat your oven to 350 and prep a square baking dish for nonstick. I like to use parchment paper.
- While the oven is preheating you can prepare the crumble layer by combining the crumble ingredients together, making ingredient adjustments as need to get a grainy and moist consistency.
- Add about half of the cake batter from the mixing bowl to the prepared baking dish, evenly distributing the ingredients. Then evenly distribute about half of the crumble ingredients over the batter. Top the crumble with the remaining batter and then top that with the remaining crumble ingredients.
- Bake the ingredients until golden brown, about 26-28 minutes.
- While the cake is cooling, you can prepare the cream cheese glaze, adjusting the ingredients as needed for desired consistency.
- Once the cake has cooled, you can top it with the glaze and enjoy!
