It takes just a few simple ingredients to make this tasty treat.
The result is a tasty sweet and salty, smooth and crunchy, simple snack or dessert.
To make this recipe we will start by toasting both the nut and coconut.
Then we will combine the ingredients together and mix in some melted sugar free chocolate.
Lastly, we will scoop the mixture out into clusters to set.

- Cashews. Use unroasted cashews as we will roast them.
- Sugar Free Keto Chocolate Chips. You can use any kind as long as it can be melted.
- Coconut Flakes.
- Optional ingredients include Kosher or sea salt, seeds, other kinds of nuts, or keto friendly cereal.
How to make Sugar Free Keto Coconut Clusters
- We will start by roasting the nuts and coconut. Preheat your oven to 325 and prep two rimmed baking sheets with nonstick.
- Evenly spread the cashews over the first baking sheet and then bake the cashews for 10 minutes to roast. Make sure that you stir the cashews at about five minutes into baking.
- While the cashews are baking, evenly spread the coconut flakes over the second baking sheet. After you remove the cashews from the oven place the coconut flakes into the oven to bake for ten minutes, stirring at about five minutes in.
- While the coconut flakes are roasting, line two more rimmed baking sheets with wax paper.
- Next, in a microwave safe bowl, heat the chocolate chips and heat for 1 minute. Carefully stir the melting chips vigorously. Return the chocolate to the microwave and heat in 30 second increments, stirring very well between each heating until melted. Do not overheat.
- Meanwhile, while the chocolate is cooling to room temperature, in a large bowl, mix together the the cashews and coconut along with any optional ingredients. Then pour the melted chocolate over the coconut mixture and mix or toss until completely combined.
- Use a large cookie scoop or an ice cream scoop to scoop out the mixture and place the scoops on to the wax paper.
- Refrigerate the clusters until set- about 15-20 minutes.
