    Coconut clusters have the perfect balance of sweet and salty flavors as well as a chewy and chocolaty texture, all in a bite-sized candy.

    What you need to make chocolate coconut clusters.

    • Cashews. Use unroasted cashews as we will roast them.
    • Sugar Free Keto Chocolate Chips. You can use any kind as long as it can be melted.
    • Coconut Flakes.
    • Optional ingredients include Kosher or sea salt, seeds, other kinds of nuts, or keto friendly cereal.

    How to make Coconut Clusters

    1. Start by roasting the nuts and coconut. Preheat your oven to 325 and prep two rimmed baking sheets with nonstick.
    2. Evenly spread the cashews over the first baking sheet and then bake the cashews for 10 minutes to roast. Make sure that you stir the cashews at about five minutes into baking.
    3. While the cashews are baking, evenly spread the coconut flakes over the second baking sheet. After you remove the cashews from the oven place the coconut flakes into the oven to bake for ten minutes, stirring at about five minutes in.
    4. While the coconut flakes are roasting, line two more rimmed baking sheets with wax paper.
    5. Next, in a microwave safe bowl, heat the chocolate chips and heat for 1 minute. Carefully stir the melting chips vigorously. Return the chocolate to the microwave and heat in 30 second increments, stirring very well between each heating until melted. Do not overheat.
    6. Meanwhile, while the chocolate is cooling to room temperature, in a large bowl, mix together the the cashews and coconut along with any optional ingredients. Then pour the melted chocolate over the coconut mixture and mix or toss until completely combined.
    7. Use a large cookie scoop or an ice cream scoop to scoop out the mixture and place the scoops on to the wax paper.
    8. Refrigerate the clusters until set- about 15-20 minutes.

    Tips for making the best coconut clusters.

    I like to line two baking sheets with wax paper rather than parchment paper for this recipe. The wax paper seems to do a better job with allowing the chocolate to set without sticking.

    1. My clusters were made using cashews. Really, about any nut or combination of nuts would add flavor, crunch, and texture to these treats.
    2. Use sugar free chocolate chips that can be melted. However, you can alternatively use sugar free white chocolate chips instead or in addition (split the recipe in half!) to the regular chocolate chips.
    3. For added crunch and goodness, why not add a bit of keto cereal or granola? You may need to add a bit extra chocolate or take out some of the nuts to balance out your ingredients.

    How to store clusters.

    Coconut clusters should be stored in an airtight container, or individually wrapped, in the refrigerator where they should keep for about a week. This candy can also be frozen if wrapped properly, should keep for up to a few months..
