This recipe is made with a frozen puff pastry sheet. The cold puff pastry will allow for the flaky crust to dorm while baking thanks to the cold butter that is used to make it with. For this reason, do not let the puff pastry to get to room temperature.

Ingredients needed to make Chocolate Filled Croissants made with no added sugar.
- Frozen puff pastry. My croissants were made with a pastry sheet. You can use the premade refrigerator dough however, it will not look the same as mine.
- Sugar free chocolate hazelnut spread. If you do use solid chocolate instead of spread, while chips will do, chocolate bars are a more 'authentic' filling. You can shred or slice the chocolate to fit.
- Egg. This is used to make a wash which is brushed over the croissants before baking. The wash will help give the croissants a shiny and golden brown color when baked.
- Water. Added to the egg to make that wash that I just described.
Expert Tipπ Chilled pastry dough works best in this recipe as it allows the baked croissants to get that buttery flaky texture. You can also refrigerate the filling to help keep the dough cold.
How to make Sugar Free Chocolate Filled Croissants
Prep Time: 5 minutes.
Bake Time: 15 minutes.
Servings: 6.
- About a half hour before making the croissants, remove the pastry dough from the freezer and let it thaw at room temperature. This will help the dough defrost and get to a 'cool' temperature that you are also able to work with. If your dough is not pliable after a half hour at room temperature, allow it to sit a bit longer as needed.
- Preheat your oven to 350. Prepare a rimmed baking sheet with parchment paper or a baking mat.
- On a clean workspace, open up the puff pastry sheet. You can lightly dust your workspace with flour if needed.
- Use a pastry brush or spoon to evenly spread the chocolate hazelnut spread over the pastry to about a half inch from the edges of the pastry.
- Take the side of the covered pastry that is closest to you, grabbing it by the corners, and fold the pastry in half so the the corners in your hands meet up with the corners on the opposite sides. You should make a rectangle with the folded dough with the open long side facing away from your and the folded side facing you.
- Next, use a pastry wheel or knife to slice the dough into three evenly sized rectangles by slicing the dough into thirds. Then slice each of the thirds into triangles by cutting the rectangles in half from the top right corner to the bottom left corner.
- Roll up each of the triangles, starting from the wide side, so that the pointed side wraps around the top of the croissant (see mine if you are confused). Place the croissants on your prepared baking sheet leaving space between one another.
- To make the egg wash, use a small whisk or a fork to combine together the egg and the water. Then use a clean pastry brush to brush this over the croissants.
- Bake your for 15-17 minutes or until the tops turn a golden brown. The pastry should appear to be 'puffy'.
- Let the croissants sit on the baking sheet for a couple of minutes before transferring them.
Expert Tipπ These croissants can be frozen. Once they have cooled you can place them in an airtight container or wrap them well. They should keep for a few months when frozen. When you are ready to enjoy the frozen croissants you can place the in your refrigerator overnight the night before you are ready to server them to thaw out.
