    • Flour. Regular all purpose flour was used to make my muffins.
    • Baking Soda. Added as the leavener for this recipe.
    • Salt. You can omit this if you are using salted butter.
    • Butter. Your butter should be softened to room temperature.
    • Peanut Butter. Use sugar free creamy peanut butter to keep this recipe as low in sugar as possible.
    • Sugar Alternative. Use a granular sugar alternative that measures like sugar and that can also be baked with.
    • Eggs Your eggs should be at room temperature.
    • Milk. Regular or almond milk can work in this recipe.
    • Vanilla Extract. Added for a flavor balance.
    • Bananas. Use really ripe bananas that have also been mashed.
    • Sugar Free Chocolate Chips. You can add additional chips to the tops of the muffins just before baking.

     
    Expert Tip๐Ÿ‘‰ You can use a food processor, potato masher, or fork to mash your bananas. However, leaving a few small chunks of banana can add to a more interesting texture to your muffins.

    How to make Sugar Free Chunky Monkey Muffins

    Prep: 20 minutes
    Yield: about 24 muffins

    1. Preheat your oven to 325 and prep your muffin pan well for nonstick. If you have not mashed your bananas, do so now.
    2. In a large bowl, use a whisk to combine together your flour, baking soda, and salt.
    3. Next, in a large mixing bowl, beat together the butter and peanut butter until blended. Then add the sugar alternative and beat until creamy.
    4. Add the eggs, milk, and mashed banana to the large mixing bowl and mix until just combined. Then add in the dry ingredients from the first bowl with the wet ingredients to the mixing bowl. Do not over-mix.
    5. Use a rubber spatula to fold in the chocolate chips.
    6. Fill the muffin cups about โ…” full as the muffins will expand while baking. Then bake for 20-25 minutes or until the muffins turn golden brown and a toothpick comes out clean. Note that melted chocolate on the toothpick should be ignored when testing the doneness.
    7. Remove the muffins from the oven and let them sit for a couple of minutes in the pan before transferring them to a cooling rack to further cool.

     
    Expert Tip๐Ÿ‘‰ You can freeze leftover muffins by first wrapping the cooled muffins in foil. If you wrap them individually and then place them into a freezer-safe zip top bag, you can enjoy the leftovers individually as well!

    Tips for making the best chunky monkey chocolate chip banana muffins.

    When selecting bananas to use in this recipe, it is best to use bananas that are very ripe. This is because softer bananas are easier to mash for a recipe such as this one.

    More helpful tips for you.

    1. Make these muffins even more authentic Chunky Monkey. Add chopped walnuts to the muffin batter for both flavor and texture.
    2. While my banana chocolate chip muffins were made in a standard muffin size, you can make your muffins another size such as mini muffin or giant muffin size. However, you may need to make adjustments as needed in baking to compensate for the size difference.
    3. When combining your wet and dry ingredients together, do so until just combined. There may be lumps and that is okay as the lumps will most likely bake out.
    4. For a healthier and more chewy muffin, sub in a half cup of oats for a half cup of the flour. Rolled oats work well in muffins.

    How to store banana chocolate chip muffins

    Chunky monkey muffins should be stored in airtight container. If properly stored, they should keep for about two days at room temperature or up to three months when frozen.
