Sugar Free Chunky Monkey Muffins

  • Preheat your oven to 325 and prep your muffin pan well for nonstick.
    If you have not mashed your bananas, do so now.
  • In a large bowl, use a whisk to combine together your flour, baking soda, and salt.
  • Next, in a large mixing bowl, beat together the butter and peanut butter until blended. Then add the sugar alternative and beat until creamy.
  • Add the eggs, milk, and mashed banana to the large mixing bowl and mix until just combined. Then mix in the dry ingredients from the first bowl with the wet ingredients in the mixing bowl.
    Do not over-mix.
  • Use a rubber spatula to fold in the chocolate chips.
    Fill the muffin cups about ⅔ full as the muffins will expand while baking.
    Then bake for 20-25 minutes or until the muffins turn golden brown and a toothpick comes out clean.
    Note that melted chocolate on the toothpick should be ignored when testing the doneness.
  • Remove the muffins from the oven and let them sit for a couple of minutes in the pan before transferring them to a cooling rack to further cool.
