Tips for making this recipe magic cookie bars.
This recipe uses coconut milk as an alternative to sweetened condensed milk as both milks are essential to the thickening needed to hold the top layers together. Evaporated milk will not work in this recipe however, you can find unsweetened condensed milk here (I have not tried in this recipe so make sure that is can be used in recipes such as this one).
More helpful tips for you.
- Yes, using coconut milk and shredded coconut can make this a 'coconutty' tasting dessert. You can adjust the amount of coconut flavor by cutting back on the shredded coconut added but, I would not cut back on the coconut milk as it is needed for for the layers to set.
- Not a fan of almond flour? Try using crushed sugar free cookies or oats instead.
- This recipe can be made in a glass baking dish or a regular baking pan. For best results, a baking dish can be baked at 325 degrees while the baking pan can be baked at 350 for similar results.
How to store these '7 layer magic bars'.
Once the bars have fully cooled, they should be stored in an airtight container. If you are layering the bars in the container, I would use wax or parchment paper between the layers. When properly stored, these bars should keep at room temperature for up to four days.

Once these magic bars have fully set and have been sliced, they should be wrapped well in foil or a freezer safe wrap before freezing. When properly wrapped, they can keep for up to a few months when frozen. I recommend that you place the bars in your refrigerator overnight before serving to thaw however.

What are magic cookie bars?
You may already know that magic cookie bars are also sometimes known as seven-layer bars or Hello Dolly bars. This is really a classic dessert that is known for combining seven (..or so...) ingredients into a layered dessert.
Magic bars feature a combination of a crunchy crust on the bottom with a sweet and chewy layered topping.
Made with a layering of coconut, chocolate, nuts, and often other ingredients, you can imagine the balance of sweet and salty along with crunchy and chewy that is in every bite. Even better, magic cookie bars are easy to make and can be made without adding sugar.
