Sugar Free Magic Cookie Bars, a simple and delicious layered dessert or snack recipe made with chocolate and pecans with no added sugar.

ย Ingredients needed to make Magic Cookie Bars made with no added sugar.

    • Almond Flour. Crushed sugar free cookies can alternatively be used. This will make the base of the bars.
    • Butter. Your butter should be melted as it will be used to make the crust with.
    • Coconut Milk. This is used instead of the sweetened condensed milk this is commonly used to make this recipe with.
    • Sugar Free Chocolate Chips. Semisweet, dark, or a combination can work in this recipe. The chocolate chips will be divided for this recipe as well.
    • Chopped pecans. I like the larger pieces rather than finely chopped pecans are the pecan are an important crunchy element in this recipe.
    • Shredded Coconut. Use unsweetened coconut to keep this recipe as low in sugar as possible.

Expert Tip๐Ÿ‘‰ Make this recipe vegan. Simply use a vegan butter to make the crust with.

How to make Sugar Free Magic Cookie Bars.

    Prep Time: 10 minutes.
    Bake Time: 45 total minutes.
    Servings: 36.

    1. Preheat your oven to 350 (325 for glass baking dish). This recipe works best in a 9X13 dish or pan. To prep a pan, first line it with foil and then spray it lightly with nonstick. For a dish, simply spray it with nonstick.
    2. To make the crust for these bars, combine together the almond flour or crushed cookies with the melted butter in a bowl until well combined. Once combined, transfer the ingredients to your prepared pan/dish and press the ingredients into place to make a crust. Bake the crust for eight minutes.
    3. Carefully remove the baked crust from the oven and pour the coconut milk over it, using the backside of a spoon to evenly spread the coconut milk of the crust as needed.
    4. Sprinkle half of your chocolate chips over the coconut milk and then sprinkle the pecans and the coconut shreds over that.
    5. Top the ingredients with the remaining chips and then return the magic bars to your oven.
    6. Bake the magic bars for an additional 30 to 35 minutes, or until the edges are golden brown and the middle is set.
    7. Allow the bars to cool completely before slicing. If you used foil to line your baking pan with you can use the foil to lift the bars from the pan before slicing.

Expert Tip๐Ÿ‘‰ Keep an eye on your bars while they are baking as they may brown sooner than 30 minutes depending on what you are baking them in.

Sugar Free Magic Cookie Bars, a simple and delicious layered dessert or snack recipe made with chocolate and pecans with no added sugar.

Tips for making this recipe magic cookie bars.

This recipe uses coconut milk as an alternative to sweetened condensed milk as both milks are essential to the thickening needed to hold the top layers together. Evaporated milk will not work in this recipe however, you can find unsweetened condensed milk here (I have not tried in this recipe so make sure that is can be used in recipes such as this one).

    More helpful tips for you.

    1. Yes, using coconut milk and shredded coconut can make this a 'coconutty' tasting dessert. You can adjust the amount of coconut flavor by cutting back on the shredded coconut added but, I would not cut back on the coconut milk as it is needed for for the layers to set.
    2. Not a fan of almond flour? Try using crushed sugar free cookies or oats instead.
    3. This recipe can be made in a glass baking dish or a regular baking pan. For best results, a baking dish can be baked at 325 degrees while the baking pan can be baked at 350 for similar results.

How to store these '7 layer magic bars'.

Once the bars have fully cooled, they should be stored in an airtight container. If you are layering the bars in the container, I would use wax or parchment paper between the layers. When properly stored, these bars should keep at room temperature for up to four days.
