- While my cookies are made with sugar free vanilla instant pudding mix, you can really use the flavor of your choice. You can try a sugar free instant pudding such as chocolate, butterscotch or banana cream.

- All Purpose Flour. All purpose flour was used to make my cookies. You can however use another flour as long as it measures like all purpose and additional binder needs are considered as needed. Almond flour or a low carb all purpose flour should work.
- Sugar Free Vanilla Instant Pudding mix. Make sure that you are using "instant" pudding mix. We are adding this as a dry ingredient.
- Baking Soda. Added as a leavening agent.
- Butter. Your butter should be softened to room temperature. If you are using unsalted butter, add a half teaspoon of salt to the flour.
- Sugar alternative and Brown sugar alternative. For best results, select granular sugar alternatives that measure like sugar and that can also be baked with.
- Vanilla Extract. Pure vanilla extract is encouraged for optimal flavor.
- Egg and Egg Yolk. The eggs should be at room temperature for optimal blending.
- Sugar Free Sprinkles. You can use the colors of you choice.
- Sugar Free White Chocolate Chips. I prefer the baking kind of white chocolate chip for this recipe as they tend to hold up better when baked in a cookie.
Expert Tip👉 Use another flavor of sugar free instant pudding mix for part of or instead of the vanilla pudding mix for even more flavor!
How to make Sugar Free Sprinkle Cookies
Prep Time: 15 Minutes.
Bake Time: 10-12 minutes.
Servings: about 30 cookies.
- Preheat your oven to 350 and prep your baking sheet(s) as needed for nonstick. Parchment paper or a baking mat should work for these cookie .
- In a medium bowl, use a whisk to combine together the flour, pudding mix, and baking soda.
- Next, in a mixing bowl, beat together the butter with the sugar alternatives until creamy. Add the vanilla extract and then beat in the eggs (egg and egg yolk), one at a time, mixing after each addition and the .
- Gradually add the dry ingredients from the first bowl to the wet ingredients in the mixing bowl and mix until just combined. Be careful not to overmix the dough however.
- Lastly, use a rubber spatula to fold in the sprinkles and white chocolate chips.
- Use a tablespoon to drop the cookie batter on to the prepared baking sheets about two to two and a half inches apart.
- Bake the cookies for 10 to 12 minutes, or until the edges are lightly golden. Then remove the cookies from the oven and let them cool on the baking sheet for a couple of minutes in order to set before transferring them to a cooling rack to cool completely.
Expert Tip👉 These cookies are very soft and should be done baking when they begin to turn brown in about 10-12 minutes even if they seem like they are not done. Sitting on the warm baking sheet will help these cookies set properly.
