This is a recipe for soft and chewy vanilla flavored chocolate chip cookies made with no added sugar. The cookies are flavored with instant vanilla pudding mix and chocolate chips.

Ingredients needed to make Chocolate chip pudding cookies
- All Purpose Flour. All purpose flour was used to make my cookies. You can however use another flour as long as it measures like all purpose and additional binder needs are considered as needed. Almond flour or a low carb all purpose flour should work.
- Baking Soda.Leavening agent used in this recipe.
- Sugar Free Vanilla Instant Pudding.Make sure that you are using "instant" pudding mix.
- Butter. Your butter should be softened to room temperature.
- Sugar alternative and Brown sugar alternative. For best results, select sugar alternatives that measure like sugar and that can also be baked with.
- Eggs. The eggs should be at room temperature for optimal blending.
- Vanilla Extract. Pure vanilla extract is encouraged for optimal flavor.
- Sugar Free Chocolate Chips. I prefer a milk chocolate sugar free chocolate chip for this recipe as they are softer. You can use the chocolate chip of your choice.
- Optional- additional chocolate chips (yolo!), chopped nuts, or sugar free white chocolate chips.
Expert Tip 👉 Use another flavor of sugar free instant pudding mix for part of or instead of the vanilla pudding mix for even more flavor!
How to make Sugar Free Chocolate Chip Pudding Cookies
Servings: 40 cookies
Prep Time: 10 minutes
Bake Time: 10 minutes
- Preheat your oven to 350 and prep your baking sheet(s) as needed for nonstick. Parchment paper or a baking mat should work for these cookies.
- In a medium bowl, use a whisk to combine together the flour, baking soda, and pudding mix.
- Next, in a mixing bowl, beat together the butter with the sugar alternatives until creamy. Then beat in the eggs, one at a time, mixing after each addition and the vanilla extract.
- Gradually add the dry ingredients from the first bowl to the wet ingredients in the mixing bowl and mix until just combined. Be careful not to overmix the dough however.
- Lastly, use a rubber spatula to fold in the chocolate chips.
- Use a medium or large cookie scoop (1 ½-2") to scoop out the dough and then place the cookies on to the baking sheet. Since these cookies do not spread a lot, you can use the palm of your hand or bottom of a glass or mug flatten them as desired. The cookies should be about one and a half to two inches apart from one another on the baking sheet.
- Bake the cookies for eight to 10 minutes, or until the edges are lightly golden. Then remove the cookies from the oven and let them cool on the baking sheet for a couple of minutes in order to set before transferring them to a cooling rack to cool completely.
Expert Tip👉 These cookies are very soft and should be done baking when they begin to turn brown in about 10 minutes even if they seem like they are not done. Sitting on the warm baking sheet will help these cookies set.
