This is a simple recipe for making double chocolate cookies flavored with brewed coffee.
To make this recipe we will first make the dough and then refrigerate it before baking the cookies.

- As a sandwich with ice cream or sugar free frosting in the center.
- Or, as individual skillet cookies with a bit of whipped topping.
Ingredients needed to make Sugar Free Mocha Chocolate Chip Cookies
- Flour. All purpose flour was used to make my cookies. I have not tried an alternative such as gluten free all purpose flour or low carbohydrate all purpose flour.
- Unsweetened Cocoa Powder. Darked cocoa powder will yield you darker cookies if you want to make darker cookies.
- Baking Soda. Added for leavening.
- Butter. Your butter should be at room temperature. Also, if you are using unsalted butter, add a half teaspoon of salt to the dry ingredients.
- Sugar Free Brown Sugar Alternative and Sugar Free Granulated Sugar. For best results, please select alternatives that measure like sugar and that can also be baked with.
- Espresso Coffee. Your coffee should be chilled for this recipe.
- Egg. Have your egg at room temperature for this recipe.
- Vanilla Extract. For even more of a coffee flavor, you can sub in coffee extract for part or all of the vanilla extract.
- Sugar Free Chocolate Chips. I like milk chocolate chips but, really you can try dark chocolate or a combination of chips.
- Optional, chopped nuts or sugar free white chocolate chips.

How to make Sugar Free Mocha Chocolate Chip Cookies
Prep Time- 10 minutes.
Refrigerate Time- 15 minutes.
Bake Time- 12 minutes.
Yields about 24 cookies, 2 cookies per serving.
How to make these cookies.
- In a medium bowl use a whisk to blend together the flour, unsweetened cocoa powder, and baking soda.
- Next, in a mixing bowl and using a stand mixer with a paddle attachment (preferred method), beat together the softened butter with both of the sugar alternatives until smooth. Then add the espresso, eggs, and vanilla and mix until combined.
- Add the dry ingredients from the first bowl to the mixing bowl and mix until combined. Then fold in the chocolate chips.
- Use plastic wrap to tightly cover the bowl and refrigerate the cookie dough for at least 15 minutes.
- When you are ready to bake the cookies, preheat your oven to 350 and prep two baking sheets for nonstick (I like parchment paper for a recipe such as this one).
- Use a cookie scoop to scoop out the cookie dough (mine were made with a large scoop) to scoop out the dough for the cookies.
- Bake the cookies for 10-12 minutes or until the edges of the cookies appear to be set. Then take the baking sheets out of the oven and let the cookie continue to set for another three minutes before transferring to a cooling rack to finish cooling.
Expert Tip👉 Adding an extra egg can make your cookie more moist and chewy. If you decide to do so, you may need to adjust the baking time by a minute or two.
