This is a simple no churn recipe for ice cream that has no added sugar in it.
The ice cream is flavored with a simple raspberry swirl that is made with raspberry jam.
To make this recipe you will need a loaf pan that can fit into a freezer.
We will start by combining the dairy ingredients and then adding the raspberry cheesecake swirl. Then we will freeze the mixture in order to set before enjoying!
Ingredients needed to make Sugar Free Raspberry Cheesecake Ice Cream
- Heavy Whipping Cream. The whipping cream should be cold and it will be divided in this recipe.
- Vanilla Extract. Using "pure" vanilla extract is suggested.
- Salt. Use a large salt such as Kosher Salt.
- Cream Cheese. Use a 'bar' or 'block' cream cheese as a 'whipped' or 'tubbed' version will not work in this recipe. Also, your cream cheese should be softened to room temperature.
- Unsweetened Condensed Milk. If you cannot find this, here is a recipe for sugar free condensed milk or you can use an alternative such as half and half or unsweetened coconut milk.
- Raspberry Jam. Sugar Free Raspberry Jam is preferred for keeping this recipe sugar free.
- Sugar Free Cookies. Use a cookie that resembles graham crackers. If you do not mind the sugar from graham crackers, you can use those. Your cookies will need to be crushed.
How to make Sugar Free Raspberry Cheesecake Ice Cream
This recipe makes about one and a half quarts or about eight servings.
- Start by placing your loaf pan into your freezer to get cold while you work.
- In a large mixing bowl, combine together two cups of the heavy whipping cream, the vanilla extract and the salt Beat the ingredients until stiff peaks form. Then set the ingredients aside as you work.
- Next, in another mixing bowl, beat the cream cheese until smooth. Once the cream cheese is smooth you can add the remaining heavy whipping cream (a quarter cup) along with the condensed milk (or substitute) and mix until well combined.
- Use a rubber spatula to fold the cream cheese mixture from the last step into the whipped cream mixture from the first bowl.
- You can remove the loaf pan from the freezer and then pour half of the mixture from the last step into the pan. Then use a large spoon or spatula to evenly spread the ingredients out as needed.
- For the next step we will be adding a layer of raspberry swirls. To do this, use a spoon to place dollops of the raspberry jam on top of the layer of ice cream mixture. Use only half of the jam as you will need the remaining to top the ice cream with.
- Next, use a butter knife to make the raspberry jam swirls. Then sprinkle half of your crushed cookies over the jam swirls.
- Pour the remaining ice cream mixture over the crushed cookies and then repeat the process over (ice cream mixture, swirls, and then crushed cookies) using the remaining ingredients.
- Cover the loaf pan with plastic wrap and place the loaf pan back into the freezer for the ice cream to set. It should take between six and eight hours for you ice cream to fully set.
Expert Tip 👉 When making the swirls, first add the dollops of jam evenly spread apart. Then use your butter knife to gently make the swirls, taking care to not press the knife too deeply into the ice cream.
